My Banana Tigernut Milk Smoothie is highly recommended when you need lots of energy and there is no time for heavy meals. It is that time of year when all the weddings, chieftaincy title celebration, funerals and so on have to happen before year end. After a very quiet year in the market place I have seen a sudden upsurge in activity in the market. I guess it is the Christmas bonus that workers get at this time of year . Or the spike in political activities that has pushed some money into the hands of people? Whatever it is the traders in the market seem to be smiling a bit .
When my dad had to celebrate his 5th year on the throne, and I had to do some shopping at about this time of year. It is an activity I will not like to carry out ever again. The sheer calories one burns is so amazing, going back and forth in the market, bargaining, trying to avoid being run over by trucks and human traffic .
Today’s smoothie is just the right thing you need to have when setting out for such a high energy demanding activity as shopping at Christmas.
I used Tiger nut milk in this recipe and it was just amazing. I was trying to avoid the fat from full cream milk which is an option you can use for this recipe.
Recipe for Banana Tigernut Milk Smoothie
Ingredients
2 1/2 medium size banana
11/2 cups Tiger nut (1 cup Tiger nut milk )
1/2 lemon
1 tablespoon crushed Cashew nut
Method
1, Wash and blend the tiger nut with 11/4 cups water. To avoid damaging your domestic blender, first pound the tigernut in a mortar to crush the nuts into smaller bits. Then grinding in the regular domestic blender
2, Squeeze out the milk and pass through a fine sieve to get the milk.
3, Peel the banana and squeeze the lemon on the banana to prevent rapid browning of the banana .
4, Pour the milk and banana into blender and blend until smooth.
5, Serve chilled with sprinkle of crushed cashew nut.
Tip: Prepare and chill the milk in advance and keep the banana in the fridge to be cold before blending. This way you can have your smoothie right after blending .
If the smoothie changes colour to a bit dark brown or grey there is nothing to worry, bananas change colour when exposed to air.
