How to make Boiled Beans with Effirin Sauce & Semi-Ripe Plantain
Beans and plantain is one of my favourite meals and one of the most popular dishes in Nigeria, but recently the regular beans pottage with Palm Oil has been kind of boring. Today’s dish is taking the regular boiled beans and making it more exciting and more nutritious. Recently, a guest that visited was served this dish and the plate was wiped out almost instantly. Therefore it is with this sampling report that I am confident to share the recipe with all the rest of my followers.
Beans are one food that causes gas discomfort for some people particularly when eaten in the evening. In addition some others even get constipated with beans. The idea of Effirin / Ntong/ Nchawun therefore is to help ease mobility in the digestive track.
Finally this is a dish that is so easy to prepare as the ingredients are in your neighborhood markets particularly if you live in Nigeria.
Enjoy!
How to Prepare Boiled Beans with Effirin Sauce & Plantain
Ingredients
1 cup Boiled Beans
2 cups shredded Effirin
2 cooking spoons Palm Oil
1/2 cup shredded Shawa
1 cooking spoon Tomato/ Pepper blend
1/4 medium size Onion( chopped)
1 table spoon crayfish
Beef seasoning to taste
Salt to taste
Method
- First of all, boil the beans with salt and some seasoning cube till very soft . I used a pressure cooker which made the process even faster and the result was very soft beans
- Heat the oil fry the onion for about 2 minutes and add the tomato/ pepper mix and fry for about 2 minutes. Add the fish, crayfish and seasoning and continue to fry till the sourness of the tomato goes off.
- When the tomato sauce is ready add the finely chopped Effirin and cook for about 2 minutes. Check the seasoning and correct.
- Lastly, serve the boiled beans with the sauce and boiled plantain. I boiled the plantain with the skin . This method helps to retain nutrients in the plantain and above all it is easy to cook this way.
