Let us say that I am upgrading our simple rice and stew to something different and interesting which is Buttered Rice and Garlic Beans. After all variety is the spice of life.
Sunday lunch back in the days was rice and Stew . And we did look forward to this when everyone returned from church. The stew was made with groundnut oil and I still remember my mum’s stew and nothing tastes like it. I have tried so much to replicate this but I must say not with much success. I guess it’s this thing about what quantities of tomato, pepper and onion you use for your stew. In any case no one measures ingredients in Nigeria which is why you will have stews taste different from one house to the other.
Today rice and stew is so common place that I must say it has a rather boring image. Even with the addition of beans, Rice and stew is a meal you eat when you are not in the mood to make anything complicated.
Today I bring an exciting twist to this familiar dish. It is so unbelievable how a familiar daily dish can be turned around with addition of some simple ingredients.
I even kind of find it amusing how I manage to arrange rice, beans and mackerel fish and make it look and taste so good. I do surprise even me sometimes.

Recipe for Buttered Rice and Garlic Beans
Ingredients
1 cup Jasmine Rice (Rice for making Tuwon shinkafa)
1 cup Brown Beans
2 tablespoons Butter
1 clove Garlic
Chicken Seasoning
Salt to taste
Method
- Boil the rice and beans separately until very soft
- When the beans is also most cooked, peel, crush and add the garlic , seasoning and a little salt if needed. Boil bean till very soft and and water is almost dried up , add 1 table spoon butter and mash into a smooth paste.
- When rice is very soft and water dries up, add the butter and mash coarsely.
- Serve the mashed garlic Beans and Butter Rice with Mackerel Stew or any other stew of your choice.
Should try this, maybe it will make my children eat beans
