Laugh till tears roll down your eyes
I grew up in a house full of people, five siblings( a catholic family trait) , cousins who were being helped by dad to further their education and the official house helps all made up the house hold. Really there was no shortage of laughter, it was either my dad was cracking everyone up and he still does this at 91 years , or my mum’s yelling made some of us scurry to our rooms to burst out in laughter after a cousin, house help or even one of us have gotten the length of her tongue.
I have taken on this healthy laughter into my home. I simply choose to look at the fun side of things most times. When my siblings and I get together for one of those family reunions be sure that laughter will feature prominently on the menu. It’s those situation that get me laughing till tears roll down my eyes or I am running to the bathroom to pee. I love those kind of moments, it called laughing from the heart.
My kids and hubby have also caught the bug. We just love laughter in the atmosphere. Laughter is the best exercise for the face and trust me it also relieves tension in so many other muscles in the body. Laughter reduces stress hormones; exercises muscles of the face, back, tummy and lungs ; reduces blood pressure; increases memory, helps creativity and so much more. Yes life could be tough and unkind but remind your self to SMILE and then LAUGH it’s good for you. Here is a dish that will bring smiles to faces when it’s served up for lunch or dinner, Chicken in orange sauce with Irish Potatoes
Chicken in Orange juice
Recipe( Serves2)
4 Chicken parts
2 -3 oranges
1 clove Garlic( crushed and chopped)
2 Yellow Pepper( coarsely ground, optional)
1 cooking spoon Vegetable oil
1 tablespoon Olive Oil
Whole Onion( cut into4 chunks)
Chicken seasoning
4-6 pieces Irish Potatoes
Method
1, Season Chicken with chicken seasoning and salt and set aside for 30 minutes
2, Preheat oven at 400 degrees
3, Heat up the oil and brown the chicken on all sides and place in a baking tray or oven casserole dish
4,Squeeze on the orange juice, add the garlic, pepper, peel potato ,onion chunks and carrot. Grate on half the skin of the orange skin( rind) to add more orangey flavor. Cover baking tray with kitchen foil to allow the food cook and prevent the orange juice from drying out. Take out the tray after 15 minutes , turn the chicken to allow all parts absorb the orange flavor. Return to oven and continue cooking for another 15 minutes.
5,Check to be sure potato is cooked and remove the foil for about 5 – 10 minutes before removing the product from the oven to allow the chicken and potatoes to be crispy on top

I saw this recipe in a mag (TW i think) and i thought it was one of those foreign recipes but the picture of the finished product stuck with me.
