First confession, I do not like plain yogurt . Second confession, this dish was created out of getting me to take yogurt . But guess what, I made Chicken in Yogurt and it was simply amazing. The result blew me away. The sour, sweet flavour goes quite well with the chicken and it was exciting.
When I posted the picture of the Chicken in Yogurt on Instagram over the Sallah holiday some followers really wanted the recipe. There is something about the picture of a dish with creamy sauce that activates the saliva in your mouth. You feel like scooping the meal from the screen of your device or the page of the magazine.
Like I said I am not likening the the sour taste of yogurt even though I know the benefits like protein and good bacteria for the stomach. To tame the sourness I added some sultanas to sweeten the sauce. I think dried dates will also work well in this dish.
The fancy name for the rice is simply Jasmine or the rice used for tuwon shinkafa .The rice was boiled mashed and presented in the nice shape you see in the picture.
My husband gave his nod to my Chicken in Yogurt and I a big hug as well. I should cook this more often……*wink *wink.
Recipe for Chicken in Yogurt
8 Chicken pieces( suitable for roasting )
4 cooking spoons Yogurt
2 hands fresh Ginger (chopped)
1 teaspoon Garlic ( crushed)
1 medium size Onion (chopped)
1/2 teaspoon Rosemary
1 cooking spoon Sultanas
2 medium size Carrots( chopped)
Seasoning to taste
Dried red Chilli to taste (optional)
Salt to Taste
Method
1, Season the Chicken with salt, garlic, some onion, seasoning and a little Chilli, the Chilli is optional
2 , Roast chicken in oven till brown.
3 Pour roast chicken with all the sauce into a pot and add the yogurt, remaining onion,rosemary, chopped carrot, sultanas,ginger and bring to boil for about 3 minutes
4, Taste for seasoning and allow the ginger and carrot to cook well
5, Serve with boiled mashed rice. I used Jasmine rice.
Is there no need for vegetable oil?
Hi, Zainab. Really no need for oil. A bit of oil comes from the roasted chicken though.

What about for those of us that dont like mashed rice,would it still be ideal to eat it with the regular rice. Also can i use farn fresh yoghurt,or can you give me any brand suggestions? I dont know many of them.
Hello Temi. You can have the sauce with mashed rice. Farm fresh plain yogurt is fine.
