Creamy Shinkafa with Dambu Nama

It was a rainy weekend in Lagos and I didn’t quite feel like consuming a heavy meal. Don’t we all feel like this from time to time?
With some Shinkafa( broken rice) in the pantry, yogurt and the Dambu Nama in the fridge, Creamy Shinka with Dambu Nama was constructed in my head. Dambu Nama is a cooked, pounded and fried Nigerian meat product. You will find them readily sold at some Northern Nigerian airports. I had mine specially made by a friend’s mum. That extra chili and the painstaking home preparation makes it worthwhile to wait for this one. I suppose that some other forms of meats cut into very tiny pieces will serve to replace the Dambu .

Some of my other rainy day favorite dishes  include chicken pepper soup or hot ekpang nkukwo. I remember growing up and buying hot corn and ube( local pear) from the road side on such rainy days. Surely we all need some warming up when it rains.
And some meals are  just nice when you hold the warm bowl in your hands close to your mouth,you tuck into a coach in front of the tv,and you hear the rain beating angrily on the roof. This is the exact effect Creamy Shinkafa with Dambu Nama created for me on Sunday afternoon.

Recipe for Creamy Shinkafa  

1/2 cup Tuwon Rice or Jasmine rice
Handful diced Carrots
1tablespoon chopped Green Pepper
1 teaspoon chopped Onion
1/2 cup plain Yogurt
1 tablespoon Butter
1/2 cup Dambu Nama

Creamy Shinkafa
Pinch of Dry Pepper
Chicken seasoning to taste
Salt to taste

Method
1, Boil the rice , season with salt, pepper and the chicken seasoning
2, Add the butter and yogurt  to rice when soft and is almost dry
3, Stir with a fork to mix and cook for 2 minutes
3, Add the vegetables and Dambu Nama and stir in with fork and cook for 2 minutes
4, Serve hot .
