Edita Iwa is a favorite snack amongst the Efiks of Cross River state in Nigeria.The men are served this with love and tenderness to keep them calm before lunch is ready. I remember my mum always made sure to have Edita Iwa (cassava chips) in the house during the weekends because lunch was always late. Edita Iwa was served with imported salted smoked mackerel fish. Dad will invite us to join him.

Recipe for preparing fish for Edita Iwa?
1, Season fish with salt, coarsely ground fresh pepper, onion and cube seasoning
2, Wrap in foil and leave to stand for 15 min.
3,Bake in oven for 20 minutes. Serve with cassava chips

As the process of buying raw cassava , cooking and slicing could be tedious you may want to save your breath. But doing at home guarantees good quality chips. Cassava chips can be bought from open market in sections where Nigerian South eastern women sell things. You can also find hawkers in the market with trays of Edita Iwa and coconut on their heads selling within the maket.
