Ewa Agoyin in Coconut Milk with Smoked Prawn Pepper Stew
Ewa Agoyin is a favourite meal for Lagosians. When you take the familiar and know what to do to tweak it a bit, you get a whole new sumptuous meal on the plate.. Mashed Beans in coconut milk is my fusion of these two dishes.
Growing up I lived in that neighbourhood of Lagos called Surulere where Ewa Agoyin sellers were a common feature in the mornings. I tasted Ewa Agoyin recently and I was surprised how much the quality of taste has dropped. I guess it’s all to do with maximizing profit.
Using today’s recipe you will be making your own Mashed Beans that will beat the Agoyin woman’s version. Pair this with dodo or bread and you will jollificate (enjoy) that Saturday breakfast such that after one or two hours of sitting on the couch and pretending to be watching the TV you will realise that the TV is watching you as the sleep will take you over. That 10am snooze is always to die for. You wake up feeling so energized that you can face 2-3 events on Saturday.
I prefer to cook my beans in a pressure cooker because the texture is just so smooth , creamy and soft. A friend told me recently that she was afraid to use pressure cooker based on a previous nasty experience. When like all equipment, its important to read instruction for use.
The other tip for reducing cooking time for beans is to pre soak in water for about 1 hour before cooking.
How to make Ewa Agoyin in Coconut Milk
1. Pick out dirt and stone, wash and cook 1 cup brown beans (plain brown or honey beans) with a little salt and seasoning till very soft.
2. Add 1/2 cup coconut and cook for about 5 minutes or until the liquid almost dries up
3. Mash the beans into a smooth paste.
4. Serve with the smoked prawns pepper stew
