Time is getting to be a priced commodity and to stay healthy . But we need some time to cook these healthy meals. What we all need are tips and tricks to reduce cooking time. Just like I managed tp do with the Fish Sauce and Plantain strips. I find with good planning that eating healthy can be achieved. Choosing the right things in the right quantity will also help your healthy lifestyle ambition.
My Fish Sauce with Plantain strips is an interesting twist to boiled plantain and sauce. But the beauty is how quick this can be to prepare. The trick is that the plantain is sliced so thin that it takes less than 10 minutes to cook. If you are cooking for a diabetic person you can use unripe plantain. I used the semi ripe but firm plantain. To be able to scrape the plantain flesh you need plantain that is firm. Enjoy my offering of Fish Sauce and Plantain strips
Recipe for Fish Sauce
2 whole semi ripe plantain
1 cup smoked Mackerel Fish chunks
3 pieces Tomatoes( chopped)
2 pieces fresh scotch Bonnet pepper ( chopped)
10 pieces Shallots( small onions)
1/4 cup carrots
2 tablespoons Green Peas
Thyme and Curry to taste
Partmenger or Basil leaves
2 cookingspoons Vegetable oil
4-6 cooking spoons water
Seasoning cubes to taste
Salt to taste
Method
1, Peel, wash and scrape the plantain into strips using vegetable scraper.
2, Fry the shallots,tomatoes and pepper till soft
3, Add the fish, seasoning, herbs and spices and cook for 2 minutes. Add the carrots and green peas and cook for 2 minutes
4, Add the plantain separating the strips as you add to the pot. Sprinkle on the water.
5,Cover the pot and cook for about 8 – 10 minutes to get the plantain cooked and soft .
6, Serve Hot.
Cooking Tip: Use wooden spoon to stir the plantain so it does not mash up in the dish. Alternatively you use spoon for non stick pots as this is gentle on the plantain strips .
