How to make Flattened Bread Sausage Rolls
The intelligence of a Lagos ‘Jerry’
It’s been years since I last entertained fear of rats invading my house. This was until someone was careless and had left the kitchen door open and a tiny rodent has decided to make my life a living hell in the past two weeks. I had thought that by now I will wake up one morning and see the rat stuck to the gum but I guess the Lagos bred rats are as intelligent as the people in whose neighbourhoods they live. My kitchen floor and all corners of the kitchen is now decorated with rat gum. I wish there were a ‘ Tom ‘ (cat) in the house and my problem would have been solved pronto Meanwhile in these past weeks I have not sighted this ‘Jerry ‘ (rat). I only see the droplets and two or three pieces of Irish potato that were eaten.
As I stood very quietly in my kitchen on Sunday afternoon I finally saw ‘Mr Jerry’ scurry past into a carton. I was now more strategic on how the gums were been placed in the kitchen. As at the time this post was being written ‘Jerry’ is yet to be stuck on that gum but I guess the end is in sight pheeew! So much for Lagos rodents. I will keep you posted as to how the Jerry saga ended. Talk of a rat race.
One of the Nigeria food recipes you will find at parties, or tea breaks at seminars are sausage rolls. Basically it’s a short crust pastry with sausage meat rolled in the centre and baked. Today I give you a feel of sausage rolls without the ‘wahala’ (trouble) of having to make the pastry: Flattened Bread Sausage rolls. The making of these rolls is quite simple, all you need to do is roll out the bread slices flat, and roll the sausage in it , dip in egg and butter and baking for just 10- 15 minutes or less. Enjoy the life!
How to prepare Flattened Bread Sausage Rolls
Ingredients
5 slices of Bread
5 Frankfurter Sausages or and sausage of choice
Pepper sauce (optional)
1-2 table spoon Sesame seeds (optional)
1 Egg
1 table spoon Butter
Black pepper
Method
- Start by preheating your oven to gas 400 degrees
- Boil the sausage according to pack instruction and set aside
- Using a rolling pin, flatten out each bread slice into a thin compact slice
- Spread some pepper sauce on each slice of flattened bread, your basic fried stew in the fridge can serve this purpose.
- Place each sausage on the flattened bread and roll to cover the sausage completely
- Melt the butter on heat and pour into the beaten egg and add a little black pepper
- Roll each bread roll in the melted butter egg mixture, roll over the sesame seeds , place on the baking tray and bake for about 10 minutes. You may wish to turn the rolls to brown on the top sides
- Serve warm

can we fry it instead of baking it…will it have the same taste?..
Hello Ifeoma. I have not tried frying. May be you should try it in very little oil. What you can do is to ensure you turn frequently to brown it on all sides.
