Fried Egg with some simple vegetables and my favorite; dodo is my idea of simple, no-stress breakfast or even dinner. Suddenly in Lagos – where I live – I discovered the price of tomato has gone through the roof. My simple take on deconstructing egg stew is what I have here today. This is my idea of having all the goodness of egg, tomato, pepper, onion and dodo without breaking the bank.
Recently I won the Guarantee Trust Bank Food Fair cook off with my daughter. I will share with my experience at the food fair in a future blog post. Something I learnt at the cook off was the ability to cook without a seasoning cube. I had to rely on the natural flavor of the food ingredients to bring the desired taste to the dish. This is what great chefs know how to do.
Talking about the price of food items in Nigeria even plantains are getting to be luxurious foods. These are times when we have to put on our thinking cap and create dishes that will not be too expensive but will be healthy too. So as you make this Nigerian Fried Egg with the veggies and tomato I trust you will think up other creative ways of cooking with little use of tomatoes . I hope though that the price comes down
Recipe for Fried Egg with Dodo
2 Eggs
1 Medium size fresh Tomato
1 Scotch Bonnet Pepper
1/4 medium size Onion
2 strands Spring Onion
Pinch black Pepper
Salt to taste
Few pieces Dodo
Method
1. Chop the vegetables into tiny pieces.
2. Cut the plantain into tiny pieces and set aside.
3. Fry the Eggs and set on the plate.
4. Fry the onion, tomato and pepper for about 2 minutes. Add black pepper and salt to taste.
5. Add the spring onion and turn off the heat.
6. Set vegetables and dodo on the egg plate.
