Today I bring you Gizzard Sweet Potato. Before I get cooking the Harmattan season is that time of year when you put the efficacy of your moisturiser to test. I must say that I resort to petroleum jelly at this time, nothing beats this simple by-product of petroleum . It is really funny when you see people on the streets covered in dust, and you wonder if they could not even apply coconut oil or something similar on the skin.
Something else I picked up from a friend recently was the tip about applying castor oil to my hair line to help repair the damage from previous weave on sessions. Does this work? Well I guess to the extent that the hair around the temple is very moist and does not fall out then I guess its working. Indeed when I look in the mirror there are some virgin hairs growing, not a lot but there is progress. Or could it be because I now retouch my hair with relaxers only twice a year? Whatever the reason, I am certainly doing something right.
But really nothing beats a healthy diet. For the skin , lots of vegetable, fruits and a healthy balance of protein and carbs will ensure that you take in the needed vitamins and minerals the skin needs.
One of such balanced Nigerian meal is Gizzard Sweet Potato. It is an adaptation from gizdodo. This is one meal I find difficult to resist at parties because its simply a balanced one pot Nigerian meal. With sweet potatoes every where I turn , I decided to try gizzard and sweet potatoes and the result was amazing. Besides being one of the highly nutritious carbohydrate food, I found the sweet potatoes is not as sweet as dodo, so this will be one dish you will repeat very frequently
Recipe for the Gizzard Sweet Potato – sauce
Ingredients
2 cups Gizzard (cut in small pieces)
2-3 Cloves Garlic
Half teaspoon White Pepper
1/2 teaspoon Rosemary or Thyme
Half medium size Onion
1/2 cup chopped Green Pepper
Half cup chopped Red Bell Pepper (Tatashe as an option)
1/2 cup chopped Yellow Bell Pepper
2 cooking spoons Tomato/ Pepper mix (ground and boiled)
3/4 cups Vegetable Oil
Chicken seasoning to taste
Salt to taste
Method
1. Season gizzard with white pepper, garlic, 1 table spoon chopped onion , salt and a little dry pepper. Allow to marinade for 30 minutes. Steam till cooked for about 20 minutes. Take out the cooked gizzard and keep the stock.
2. Heat the oil in a frying pan or spacious pot and fry the gizzard till brown. Add the remaining onion to the gizzard and fry till brown
3. Add the tomatoes/ pepper mix and fry. Add all other ingredients including the stock and cook stew till very dry and the oil appears on the top of the stew.
4. Lastly, add the chopped bell peppers and sweet potatoes and toss to mix sauce well into potatoes and peppers. Avoid stirring with a spoon so as not to crush up the potatoes. Cook the Gizzard sweet Potatoes for about 3 minutes and its ready.
5. Serve hot!
Recipe for making Baked Sweet Potatoes
Ingredients
2 medium size Sweet Potatoes ( peeled and cubed)
1/2 teaspoon Suya Pepper
2 tablespoons Vegetable oil.
Method
1. Put water in a pot and bring to boil and add the potatoes and boil for about 4 minutes. Avoid boiling for any longer so that the potatoes does not get too soft.
2. Strain off water from the potatoes, transfer onto an oiled baking tray. Sprinkle on the Suya pepper and the oil on the boiled potatoes and bake for about 20 minutes or until crisp on the outside.

Hello Ify. Sure you can fry the potatoes, its just that the Suya spice will just not get into the potatoes as when you bake.

The recipe looks good and easy to make save for the baking part. Since I’m keeping off fries and I don’t have an oven I do have a microwave. Will that do the trick?
Hello Tobi. I am not a great fan of cooking food with microwave. The impact of this type of cooking on the quality of nutrients in food is still being studied . But guess what you boil your potatoes to be hard cooked and use .
Would love to try this recipe but I don’t like peeling and cutting sweet potatoes.I always find it so hard, though I like eating them. Is there an easy way to peel and cut them?

May i throw in a question please, I have an Ignis cooker with an ‘oven’ section. in there, flames are produced from the top and the bottom, and it ‘cooks’ everything in there. Does this still apply as an Oven for baking? Do I need to get another kind of oven if i need to bake?
