It’s 5 am in Lagos, and the homes are already bustling with activities . Mum is struggling to get her youngsters to get out of bed, she scuttles between the children’s bathroom , the kitchen , her own bathroom and wood robe. Kids are ready and mum races out the door sleeping hair net still on her head, to drop off the kids. What amuses me is the habit of wearing hair nets to school, is this some fashion statement, I wonder? I am that kind of person that believes whether you see me in my PJs or my evening gown I should look my best. So I struggle to understand why you should leave the house in the day time knowing that you will most likely meet other mums in their work clothes and you  decide to turn up like that? Guess someone should come up with a nicer looking easy to wear head dress for mums, there is clearly a market need for this….We can call it School Runs cap or hat.. That should be cool.

I know something else mothers struggle with in the mornings is what to put in the lunch box. We all go through that guilt trip when we want something healthy in those  boxes but time will not permit ,so we resort to biscuit and ‘drinks’. Generally Nigerian Snacks are full of white wheat flour and when this forms part of the daily diet  it has serious implications on healthy later in life. I understand the convenience of biscuits in lunch boxes or office tea breaks but how about we vary this with easy to make snacks coming from items we are familiar with.

Here I am talking about Groundnuts (Epa) and Guguru (local popcorn)

I love to eat Guguru and Epa at work, but the smell of the groundnut is a dead give away. So today’s creation is to make it convenient for me to have my groundnut based snack without the strong groundnut aroma and I even added some Chilli pepper and Honey, taking it to another level.

So Saturday afternoon I  decided no outings, no visits; just me and myself (quality me time) and I had these yummy cookies with a chilled bottle of Amstel Malta (low sugar drink). I placed my feet on my favourite  cushiony foot stool, tuned the TV to my favourite Food Channel. Moments later I slipped into a nice 30 mins  snooze on the couch. What a relaxing afternoon.

So, with just 4 ingredients you can make these nice pyramid cookies for yourself and the family. Enjoy!

 

Recipe

Ingredients

1 cup Groundnut

1 cup Guguru ( local popcorn)

1/2 cup Honey

1/4 teaspoon dry Pepper

Guguru and Epa

Method

1. Blend the ground nut until smooth

2. Blend Guguru to a fine powder. If it does come out very fine do not bother

3. Mix groundnut powder, Guguru powder, honey and pepper. Knead slightly to bring the paste together

4. Heat up the oven to 400 degrees. Lightly grease your baking tray.

5. Mold and shape the paste into pyramids using a plastic funnel. Place some quantity of the mixture into the funnel, press down to form the pyramid shape, and turn it out onto a baking tray. So easy!

6. Bake for about 7 minutes and the cookies are set.
