Spending quality time with your partner or kids could include doing things together like baking. The smell of freshly baked foods in the kitchen is always so welcoming and mouth watering. You feel like making a nice cup of tea and settling down with a book to savor your baked product.
These day I always have some quantity of whole wheat flour at home knowing that I will need to make quite a few things with . I mill this in bulk from the market and store in the fridge .
Did I hear some say why not just buy your cookies from the shop. Trust me they don’t taste the same and besides you can guarantee the quality of ingredients you are using for your home made cookies.
The fun part for me in this recipe was building my arm muscle whilst creaming the sugar and butter. I need to build my arm muscle to have Micheal Obama’s arms for those sleeveless dresses.:) . If you have a man in the house this is when you may need his help.
My recently baked cookies were shared at work and you can guess the reaction. All cookies disappeared in a matter of minutes. Is this not the reaction all cooks look for?
Recipe
100gm butter( 1/2 of a tablet)
3/4 cup sugar
1 cup whole Wheat flour
4 tbsp oat
2 Eggs
1tsp Vanilla Essence
1/2 cup Groundnut
1/2 cup Cashew nut or pecan nuts
1/4 cup Currant
1/4 teaspoon Cinnamon
1/2 tsp baking powder
Method
1, Cream the butter and the sugar using wooden spoon until it turns white and creamy. This could take up to 30 minutes. If you are working in a hot environment , you can intermittently return your mixture to the fridge to keep it semi hard, as you don’t want the butter to melt.
2 ,When mixture is quite creamy and whitish, break in one egg at a time and cream even more vigorously till egg mixes well and it does not curdle.You will have a slightly thicker cream.
3,Add vanilla and mix stirring in the same creaming direction.
4, Mix all dry ingredient together
5 , Pour dry ingredients into the cream.
6, Using a fork mix all ingredients stirring lightly in one direction for about 1 minute.
7, Scoop using ice cream spoon if you have one or any other spoon onto previously oil baking tray or line your tray with grease proof paper.
8, Bake for about 30 minutes until brown.
