Weekend Vibes with my Honey and Spicy drumsticks is just the way to end a working week.
But why can’t I just get to sleep till say 10 am on a Saturday morning? My body clock just seems to have been programmed to wake at 6am irrespective of the day of the week.
So on Saturdays I will make my well brewed cup of tea, get me some cookies and watch tv. With remote in one hand I will switch channels watch food programs, some fashion shows and do a little reading . This is always my me time when I also get to reflect on the last working week. What went right and what I could do better.
So the rest of the day follows with some social events, sometimes food photo sessions which comes with much cooking.. Much music goes with this session. This last week it was old school music all the way to Cool and the Gang, Earth Wind and Fire, Bright Chimezie….. It was a pot pourri of selections.
So much for my Saturday rituals, lets get to what I am offering today….Honey Spicy Drumsticks. Well seasoned chicken is sometimes all you need to have for dinner if you are on a low Carb diet . Or simply have this yummy drumsticks and watch the tray empty out in seconds. You may also wish to try out other interesting Nigerian small chop like Plantain balls.
Recipe for Honey Spicy Drumsticks
8 Chicken Drumsticks
1/2 medium size Onion
Fresh Ginger(size of the little finger)
1 teaspoon Dry Pepper
1/2 handful fresh Parsley
2 tablespoon Honey
2 Chicken seasoning cubes
Salt to taste
1 cooking spoon Vegetable Oil
Method
1, Rinse the drum sticks and pat dry with kitchen tissue and place in a zip lock bag
2, Blend the parsley, onion, dry pepper, oil, and ginger into a smooth paste. If the blender is not moving smoothly you may add a few table spoons of water.
3, Crush in the seasoning cubes , add salt and blended ingredients into the chicken. Close the mouth of the bag and rub the bag on the outside to ensure that all the ingredients get into all parts of the chicken.
4, Add the honey into the chicken, rub in well , close the mouth of the bag and allow to stand for about 30 – 45 minutes.
5, Heat the oven at gas mark 400 , 10minutes before the chicken is ready for roasting
6, Empty the chicken from the bag onto a baking tray and bake for 45 minutes or until cooked and brown. You have to turn the drumsticks a couple of times whilst baking to achieve even cooking and browning on all sides
7, Serve warm on its own or as a side dish.

Would like to try this recipe but please what’s the local name for parsley.
Hello Dhamie, there is actually no local name for parsley. You can find it with traders that sell salad times like lettuce. If you live in Lagos parsley is available in Shoprite . In the alternative you can use the dry parsley which is sold in the spice section of supermarkets. The last alternative is to skip it but it does take away from the final taste and flavour.
I finally bought parsley yesterday. Instead of baking can I fry using a deep fryer or grill the chicken?
Hi, Dhamie. You can fry the chicken but roasting is healthier and allows your seasonings to remain on the ckicken rather than being lost in the oil.
