I am trying out something different and healthy which is Irish Potato Casserole. Using sweet potato for the same dish also gave interesting results. As may know Irish potatoes are abundant in the Jos area of Nigeria. But really there is no part of the country where Potatoes are not found. I usually switch to potatoes when regular yams become too dry.
In the next two months or so we will be hustling to make resolutions that may be abandoned two months into the year. Whilst the pressure is not yet there to commit to some resolutions I might suggest that you start now to put thoughts on paper and make it happen. I will recommend 3-5 items may be more realizable than 10 .
I have settled for 4 items and one of them is to strengthen my GIVING to others…. Materials, knowledge, time etc.
Why not put your thoughts on paper and stick on the inner part of your wardrobe door where you will see through out the year . You can monitor how you are progressing. Best of luck as you plan.

Recipe for Irish Potato Casserole
Ingredients
4 -6 pieces Irish Potatoes
1 cup minced Meat
2 cloves Garlic
1/2 Onion( cut in large chunks)
1 teaspoon white Pepper
One teaspoon fresh Thyme
1 tablespoon Cornflour
1/2 teaspoon dry Pepper
1 table spoonful butter
1 cooking spoon Vegetable Oil
2 medium size Carrot sticks
Beef Seasoning cubes to taste
1/2 cup water
Salt to taste
Method
1, Peel, wash and cut potatoes into big chunks
2, Season the minced meat with white pepper, fresh thyme, salt, pepper, and rub seasoning properly into the meat
3, Heat the oil , fry the garlic for 1 minute.
4, Add the minced meat, butter and onion chunks and cook for 5 minutes
5, Add the potatoes , water and lower the heat and cook till the potato is soft
6, Add the carrots and Cornflour dissolved in 2 tablespoons water and cook for about 2 minutes. The corn flour should help to thicken the sauce..
Correct seasoning and allow to cook for another minute and serve hot.

I noticed in the pix that u dropped a whole yellow habernero(yellow rodo). At what point does that go into the cooking process

Minced meat is freshly ground raw meat . It is available in big shops. You can also make yours at home by placing meat in a nylon bag and pounding to bits . It will not be exactly like the one in the shop, but it will be fine. Corned beef is the one sold in cans.
Can cornbeef be used?
