Jollof rice on Mosa flan because its Sunday
I love Sundays , the lunch date, visit to family and friends. My brother just moved house and it was the perfect excuse to have a small get together and bond. Staying in touch on phones and Skype is good but nothing beats physical contact…. the hugs and kisses , laughter, hand shakes and so on. Visits to family is getting more difficult , even when you leave in the same town. Big city, big traffic ‘wahala’ (trouble).
It was the perfect occasion for me to learnt a few dance steps . Any where you have kids and current songs are playing be ready to move yourself. Yes it was dancing to ‘reverse, baby pull over’ .. You don’t want to see me do this.
I didn’t know what to call today’s dish. It’s just one of those dishes I know in my head will be a hit but how do I call it so it makes into Naija’s culinary vocabulary. Jollof rice pizza?Jollof / plantain pizza?, Jollof Mosa flan? Well I ended up with Jollof rice on Mosa flan and that’s just what it is. My inspiration , I am sure you have guessed…pizza.
This simple creation comes with all the Nigerian flavours with an interesting twist. It’s jollof rice and dodo served differently.

Recipe
Ingredients
2 whole ripe Plantain
1/2 teaspoon Ginger powder
1 tablespoon wheat flour
1 cooking spoon Olive oil
Pinch dry Chili pepper
1/2 cup water
1 Egg
Seasoning cube to taste
Salt to taste
Method
1, Peel , chop and blend the plantain with water
2, Add the pepper, seasoning, flour , beaten egg ,oil ,pinch of salt and ginger
3, Mix well and leave to stand for 10 minutes
4, Pre heat the oven for about 5 minutes
5, Oil the flan pan and empty the paste into the pan
6, Bake the Mosa for about 25 – 30minutes. If you prick a toothpick through the center of the flan to the base and bring it out it should come out clean without being sticky.
7, Allow flan to cool a bit get out and spread your rice on the flan, shred some chicken on the top.
8, Cut into triangles and serve
You are too much hw do u come up with all these dishes. I’m in awe of u. Keep it up I’ve learnt a lot n I’m still learning. Pls hw do I make the dough and filling for small chops.

It will be as a topping not super sticky however it will stay in place

Hello Valeria. Yes you can use plain baking flour which is what I meant.
