My last week was a busy one with so many presentations, speaking engagements and crunching of numbers to do . So by Friday afternoon, I could not help my thoughts from drifting frequently to Saturday breeafast of Macaroni Egg Pie. I was going to have breakfast in bed . After all it was going to be Valentine’s day on Saturday.
The card, roses and gift for were all delivered to me in bed. I thought to myself this should happen every week don’t you agree? I wish… Hugs, kisses exchanged and some light conversations, I drifted back to sleep and found myself waking up at about 11am. It’s Valentine Day and hubby had muted plans of dinner before I dosed back to sleep, so my option for a meal was Brunch. What to cook? I settled for what I call Macaroni Egg Pie. One sizeable triangle of it and I was ready to face the day and enjoy the rest of the Valentine’s day

Recipe for Macoroni Egg Pie
Ingredients
3/4 Cup Macaroni
4 Eggs
2-3 pieces Sausages (boiled)
1 medium size Carrot (shredded)
1/2 Onion (chopped)
2 pieces Tomato (chopped)
2 pieces Scotch Bonnet Pepper (chopped)
1/4 cup sliced Green Bell Pepper (chopped)
1/4 cup sliced Red Bell Pepper (chopped)
1/2 teaspoon Rosemary
2 cooking spoons Vegetable Oil or Olive oil
1 Chicken Seasoning Cube
1/2 teaspoon Tumeric powder (for nice golden yellow colour)
Salt to taste
Method
1. Boil the Macaroni till soft. Drain water and set aside.
2. Heat 1 cooking spoon of oil and fry the onion, add the scotch bonnet pepper , tomato and rosemary and fry for about 3 minutes. Add the seasoning cube and salt to taste. Lastly add the bell peppers and fry for just 1 minute. Allow vegetables to cool.
3. Beat the eggs, season with salt and sprinkle on the Tumeric and beat into the egg well.
4. Combine the Macaroni, fried vegetables, remaining vegetable oil and the egg in a bowl, mix well.
5. Using a 20 cm well oiled frying pan, pour 1/2 the mixture into the pan, place the boiled sausages on top and pour in the remaining mixture.
The frying Process for Macaroni Egg Pie
6. Put the pan on the burner, cover the pot and allow to cook on medium heat . You can use a skewer to poke the pie in the middle so that the egg cooks through to the top. Watch the sides of the frying pan and as soon as the egg sets which will be about 10 minutes you turn over the other side onto a bigger frying pan.
7. Lightly oil a lager frying pan and gently turn the pie onto the the larger frying pan and cook the pie on the previously top side for about 5 minutes or until the egg sets.
8. Serve hot with pepper sauce
**Cooking tip: You can bake the pie in the oven instead of frying**

Hello Tinuola. You can bake without having to turn the pie upside down. What you do to ensure the pie cooks through is to pierce through the pie with a skewer from time to time to ensure that the heat from the base of the pan gets to the middle and cooks the egg.manage the temperature of the oven to ensure even cooking. Firstly… I am a recent recruit and i cant believe how much i look foward to every new post.
I tried the mac n egg, but to my displeasure…failed… It didn’t hold at the point of transfer from pan A to B. I have taken my learnings though and i will be back. However i ended up with some really nice tasting macroni eggs and sausgae combo…
