How to make Chicken Curry Sauce

I am making Chicken Curry sauce because I found some good quality lamb to buy. You can also use chicken, goat meat or even beef to make this sauce .Curry spice is generally used as an ingredient mainly in Nigerian stews. This yellow spice with its nice aroma is said to have originated from Britian.Curry powder  is a mixture of 6-8 spices, turmeric,chilli powder, ground coriander, ground cumin, ground ginger,mustard,cayenne, and cardamom seeds.

The use of curry powder in stews always gives the impression of a good cook . When the aroma of the curry feels the air, your neighbours may want to be invited over for dinner.
I am using chicken  as this is the meat that will be commonly eaten this Christmas . Chicken Curry Sauce is a nice departure from the regular stuff your guests are likely to expect on christmas lunch. Enjoy and Merry  Christmas!

Recipe for making Chicken Curry Sauce

Ingredient
8 pieces Chicken
11/2 tablespoons Curry powder
1 teaspoon tablespoon Flour (the type used for chin chin)
Dry Pepper to taste
1 cooking spoon chicken stock
One medium bulb Onion (chopped in small cubes)
1 cooking spoon groundnut oil
1/4 cup Currants
About 50 cl water
Chicken seasoning to taste
Salt to taste

Method
1, Season  meat with garlic , pepper, chicken seasoning and set aside.
2, Brown the chicken on all sides and set aside
3, Heat the oil and fry the onion
4, Mix the flour and curry powder and stir fry for about about 3 minutes to cook the flour. Stir all through to prevent burning
5, Add the curry powder and cook for 1 minute
5,Take pot off the fire to cool a bit and add the chicken stock and water. Cooling the  fried flour(roe) helps to prevent lumps in the sauce
6, Add the the chicken and remaining seasoning.
7, Then return pot to fire and boil until  sauce starts to thicken
8, Add the chopped date or currant and cook for 1 minute.
9, Serve the Chicken Curry Sauce with white rice

Tip:
Serving Rice with Curry sauce with Chopped tomato, onion, groundnut, orange pulp and fried  ripe plantain cubes brings that special something to the meal.
