I was at the 2015 #TasteoffLagos Food Fair over the weekend. It was interesting to see how Nigerian food is evolving. From drinks to sausages to the regular grills but with some specialized spice and seasoning mix. I also saw some move towards the health angle; smoothies and drinks. Okay some people drank their healthy drink with some large portion of jollof rice. Now that was not so healthy all the way but some good step in the right direction.
I looked hard to see if I could find swallow and soup. Hmmm this was not the occasion for such. I didn’t see ooh. All the ladies in their designer slippers didn’t want to be caught washing hand to wrap some Okro or ogbono with pounded yam…just kidding. Something tells me that for outdoor situations we like such foods that are easy to handle on a plate. Anyway I have to come up with a concept that allows one to eat garri and soup on the go. :). In the mean time I am bringing something interesting to the menu Chicken Yogurt Coconut Curry.
The organizers of this food fair have promised that the 2016 edition will be even better than this year. If you have an interesting food concept and you live in Lagos, this might just be the place to be. I look forward to the 2016 edition. By the way most of the exhibitors sold out their products.
Today’s dish could have easily featured on some menu at the food fair stand and I know it would have sold out in minutes, Chicken Yogurt Coconut Curry.
The sweetness of the coconut cream and the sourness of yogurt balances the taste out so well. The ease of cooking this dish is also the attraction for a midweek delight. Enjoy your cooking!
Recipe for Chicken Yogurt Coconut Curry
Ingredients
3 pieces Chicken lap cut into 6 (the frying type)
3 large chopped fresh Tomato
1 chopped medium size Onion
Scotch Bonnet pepper to taste (chopped)
1 teaspoon Curry powder
1 cup Coconut milk
1/4 cup unsweetened plain Yogurt
Chicken seasoning to taste
2 cooking spoon, vegetable oil
2 cloves minced Garlic
1 teaspoon minced Ginger
Dry pepper to taste
Salt to taste
Method for making Chicken Yogurt Coconut Curry
- Cut wash and season chicken with salt, chicken seasoning, pepper, ginger and garlic and set aside for about 30 minutes.
- Brown the chicken in the oil and set aside.
- In the remaining oil, pan-fry the onion, tomato and pepper till soft. You may need to add a little if the oil is too small. Add curry powder and continue frying the vegetables. Return browned chicken to the vegetable pot and cook for about 2 minute stirring the tomato/pepper/onion into the chicken to add flavour.
- Add the coconut milk, reduce the heat and allow the chicken to cook through
- Stir the sauce and correct all seasoning.
- Add the yogurt last, cook for another two minutes and the sauce is ready.
- Serve with rice.

Thanks for this recipe. Would definitely try it out. Please I would like to know what you really use as regards the coconut. The ingredients listed coconut powder. While in your method you said coconut milk. So I want to know if I can use can coconut milk or fresh homemade coconut milk. Also, u didn’t mention using maggi cubes or is that what you meant buy seasoning? Thanks.

Wow this is nice almost like curry sauce but different. Can’t wait to make my own.
Went to a friends birthday n I was surprised instead of the normal jollof n fried rice….it was white rice, fish efo riro, fried plantain, gizzard n turkey. It was still rice thou but something different n balanced. And that was the first time I saw guys, asking for more food of everything.

Ma, coconut powder or coconut milk which of them pls? D method & d recipe is different… And pls can it seen in our normal grocery store… Or is it by grating coconut and then extracting d milk as it is done in coconut rice… Thanks
