Minced Meat Cake with yam will be one of the most interesting things I have made in last few weeks. It looks like I am in love with yam right now and really this is the time to enjoy yams. New Yam is not too tender and bland, neither is it too hard which is what you get around May/June.
The reaction with the first bite of the yam and minced meat cake was first that of confusion to decode the ingredients, then a couple of nods of approval then … Yes I am chewing minced meat. On the whole it was a nice and interesting surprise. This recipe is quite similar to yam balls.
Working with Nigerian foods I have come to realize the many variety of interesting things one can come up with. The whole idea is to create with local foods but keep it simple in terms of preparation steps and ingredients continues to drive creativity on this space. Really what is the point of listing so many strange ingredients that will require an encyclopaedia to know what to look for? Talking about a ‘pedia’…the foodpedia on the top page of the site should help identify those local food items that may have names different in your locality from what I have used on the blog. I will continue to update this segment.
Yam and minced meat cakes can be eaten on its own with pepper stew or with coleslaw as I have just done. Thinking of something to take to work or put in the child’s lunch box then you have it here with our yam and minced meat cake. Enjoy!
How to make Yam & Minced Meat Cake?
1 cup boiled Yam
1 cup Minced Meat
1/2 medium size Onion, chopped
1 teaspoon Corn Starch
1 Beef seasoning
Scotch Bonnet Pepper to taste
1 clove Garlic
Pinch Black Pepper
2 tablespoons Parsley, chopped
1/2 teaspoon Butter
1 Egg for dipping cakes
3 tablespoons Bread Crumbs for dusting cake
Salt to taste
Little oil for frying
Method
1. Season minced meat with onion, beef seasoning, scotch bonnet pepper, black pepper, minced garlic and parsley. Add about 2 tablespoons of water, knead the meat well to incorporate the seasoning and set aside for about 20 minutes.
2. Heat the oil and fry the meat. Whilst frying, continue to separate the mince so that the meat does not come out as one big lump.You may need to add about 2 tablespoons of water to help cook the meat. When meat is soft, dissolve the corn starch in very little water and add to the meat and cook for about 2 minutes
3. Boil the yam until soft and mash with butter into a not-so-smooth mash.
4. Mix the meat with with the yam and mould into medium sized cakes.
5. Beat the egg, add some salt and pepper. Because I love pepper, I also added a little pepper to the egg.
6. Dip the cake in the egg and dust with the bread crumbs. Allow cake to stand for about 10 minutes.
7. Heat the oil and fry cakes till light brown and crispy on all sides.
8. Serve the cakes with coleslaw.
Ma please how did you get that mould after mixing the yam and minced meat?
Hello Ada, I used a plating utensil. But you can shape the minced meat and yam with your hands. Alternatively you cut the top and bottom of an evaporated milk tin to use in shaping .
