Nigerian Fried rice has appeared on the Nigerian food scene few years ago. Previously eaten only on special occasions you can now eat your fried rice daily as most fast food restaurants serve this dish. Of course the ingredient and method vary , but what we all have in common is green pepper and carrot. This is one of those foods that Nigerians who are not adventurous with food will eat as ‘oyinbo’ (English ) food.
I first learnt how to make fried rice working as a Dietetic intern in a hotel in Lagos. Using this method to cook my rice, I discovered allows the seasoning permeates the rice better. And that is frying the raw rice before cooking. I sometimes also use per boiled rice in my fridge for fried rice.
For me the key to a great Nigerian Fried rice is actually frying the rice in real butter. The taste is certainly better than regular vegetable oil. The other character of Nigerian Fried rice is the option of vegetables and meats you can add. Here I will say vary according to your pocket. Enjoy your time making this.
Recipe for making Nigerian Fried Rice
2 cups Rice
1/2 cup Shrimp (chopped)
Half cup Sausage (chopped)
1/2 cup boiled Liver ( chopped)
2 pieces fresh Pepper(chopped
1 medium Green Pepper(chopped)
1 medium size Onion(chopped)
I/2 tablet Butter
11/2 chicken seasoning tablet
2 bottles of 60 cl Water
Salt to taste
Method
1, Melt the butter and fry the onion for 1 min.
2, Add the washed rice and a teaspoon of the green pepper and fry for about 6mins or until rice absorbs the butter and is glistening
3, Crumble in the seasoning add salt to taste and continue to fry for about 2 mins
4 , Add the shrimps and sausage and fry for 2mins
5, Pour in the water, reduce the heat and cook till water dries and the rice is soft
6, Add the boiled liver, carrots and green pepper cook for 2 minutes
7, Serve with chicken and plantain
