Nigerian Peanut Butter is commonly found at Igbo traditional events. Nothing beats you doing some of these simple things yourself . With the popularity of the Nigerian Peanut butter and its various uses, you can make your in the market. I do find already made ones in the market but I am not sure of the quality which is why I will recommend you make at home. The thing with groundnut is that during the rainy season you have a lot of mouldy ones which is not good for the health. the bad ones contain what is called Aflatoxin which is damaging to health. This is why I will buy my bottle of ground nut take it home and select carefully to sort out these bad ones. I used roasted ground nuts in other dishes which you will find interesting like Omi Itsagwe
A little tip which I discovered to help reduce pressure on you domestic blender is to first crush the groundnut in a zip lock bag using a small pestle. When blending to a smooth paste you then can add the other ingredients
The use of Ehuru or African nut meg makes this peanut butter much more interesting than the commercially made ones. Generally, Nigerian peanut butter is traditionally used as a dip for garden eggs. I love it as spread on my bread or a dip for apples. Enjoy this spicy and savoury version.
How to make Nigerian Peanut Butter
Ingredient
1 cup roasted Groundnut
4 pieces Smoked shrimps
1 teaspoon dry pepper
1 ehuru( African nut meg)
Method
Blend all ingredients together into a smooth paste . When using kitchen blenders, you may blend and intermittently put the paste in the freezer to harden the groundnut oil so that it runs smoothly in the blender. Alternatively the guys in the open market that blend dry ingredients can do a good job for you
Use your peanut butter as Garden Egg dips or as spread on bread.
