Plantains are abundant in our markets, I am making Plantain cake with the ripe plantain. The plantain fruit  is a good source of carbohydrate and is becoming an expensive food item in Nigeria. The calorie value of unripe plantain is much less than yam or rice. This is why plantain is favoured if you are looking to reduce your calorie intake. I was thinking of playing around with some ingredients to create something fresh and nutritious with ripe plantain. I had two  lonely pieces of plantain  in the fridge one  ripe and the other unripe, eggs, ginger, pepper, flour and some left over mackerel fish.

Something can be organized I said. Cooking sometimes takes imagination and with small number of ingredients you find yourself creating a bomb and that is what this Plantain cake is all about.
Quite a number people who are on a restricted diet where plantain is recommended, boredom soon sets in as they are restricted to boiling to be eaten with stew or plantain pottage or plantain with pepper soup. So we will try this option today and bring a smile to someone’s face.
This meal is quite simple as everything goes into the blender and all you do is mould  the paste into flat beef burger sizes, toss in flour and fry in very  little oil.

Recipe for making Plantain cake?

Ingredients

1 Plantain each,ripe and unripe,
Ginger ( pinch)
½ teaspoon Chilli Pepper
I beef seasoning cube
1 Egg
1 small piece of mackerel fish( boiled , boned and mashed)
1 cooking spoon Water  for blending
Baking flour to dust on cake for frying
Salt to taste

Method

1, Peel plantains, cut into cubes
2, In a blender, add pepper,seasoning, onion, little grated ginger, salt to taste and 1 cooking spoon water to blend ingredients
2, Pour mixture into a bowl, mix in the whisked egg and mashed fish
4, Mould the paste into burger sizes, dust in the flour and keep for frying
4, Coat base of frying pan with oil  heat up to medium heat
5, Fry Plantain cakes turning as each side browns. Press out the liquid from cake as you fry to get it well cooked
6,Serve with pepper sauce  and some vegetables

  • Aunty, nice recipe but do we have to mash the plaintain or just coat in the mixture after cubing? I am a bit confused. Kindly clarify
