I bought some groundnut on my way home from work and making a sauce like Groundnut Stew is my idea of easy cooking. If you are using tender chicken Groundnut Stew is a dish you can rustle up in 30 minutes. Of course you know that as a snack groundnuts combines very well with banana ,bread, or roasted plantain. But there are quite some interesting dishes to make with groundnuts like my garri and ground nut cookies or Omitsagwe. In Cameroon groundnut is commonly used in one of their more popular soup Ndole which I will be bring to you shortly.
Groundnut is rich in proteins and oils which is good for the health. However take care to select good quality groundnut particularly in the raining season. Bad storage tends to result in mouldy groundnut . And these moulds carry some harmful organism called Aflatoxin. The way to know is to look for nuts with whitish specks. When eating the roasted version also look out and sort out the bad nuts.
You may want to prepare your groundnut paste ahead of cooking, as I do. To do this start first roast the groundnut in the oven for 3 mins to help you peel the skin easily. Then blend with water to a smooth paste. The paste stores well in the freezer.
The consistency of the sauce is usually slightly running , like curry sauce. I have kept the yellow pepper kept whole to serve some of your guests that may need an extra kick of pepper.

Recipe for Groundnut Stew?
Ingredients
2 table spoons groundnut paste
8 pieces Chicken meat
2 tablespoons ground tomato/Pepper
2 pieces Tomato ( sliced)
1tablet chicken seasoning
Garlic/Ginger
1 bulb medium size Onion( finely chopped)
3 pieces yellow
2cups Water
Salt to taste
Method
1,Season the chicken pieces with ginger, garlic, chicken seasoning and salt. Allow to marinate for 30 minutes
2,Next steam till cooked and then fry in little oil till brown
4, Drain out excess oil from pot and add onion to chicken pot and fry for 2minutes
5, Add the tomato/pepper mix , chopped tomato and fry for 2 minutes
6, Add the chicken stock and water, groundnut paste remaining chicken seasoning , whole yellow pepper and cook for 15 minutes
7, Serve sauce with Rice

Hello Angel. It is roasted groundnuts . You peel the ground nut and blend or grind in the dry ingredient part of the domestic blender into powder and use. Simple 🙂
