Mango Chicken Sauce
Mango Chicken sauce is one dish you should be cooking in this season of mangoes. With Mangoes in season, pairing this flavourful tropical fruit with chicken is one other way to enjoy mangoes. The simplicity of this sauce and the ease of preparation in an added incentive for you to try Mango Chicken sauce. You can also try one of our previous recipe, Baked Tilapia with Mango Salsa.
Growing up in Aba and living with my parents at the Government Residential Area with large mango trees I grew to love mangoes. The smell of freshly plucked mangoes is so irresistible. In the southeast of Nigeria there were many varieties like ‘opioro’ which remained green even when its very ripe. The name is derived from the long shape. Peter and Paul were the big and fleshy ones but also tangy in the middle. Then the last ones which did not have a specific name will stick in between the teeth and you had to take forever to dislodge the ‘rope’ of the mango out of your teeth.
This recipe here is not going to leave any threads between your teeth. In fact when I was done tasting this dish I thought I was eating a sweet and sour dish in a Chinese restaurant. Or as some of my eastern brothers will call it ‘Chineze’. Really this is a must-try recipe as soon as you find mangoes in your neighbourhood .
