What’s for Lunch, What’s for Dinner?
Most women at one time or the other just can’t figure out what to cook as other things are taking up our time. Sometimes we are scratching our heads just a few minutes to meal time wondering what to serve up .this meal time table takes into account that breakfast is possibly the most difficult to make as we need to head out the door early , so the time to prepare complicated thing particularly on week days is not available. For dinner I have tried to make it slightly lighter, but again I appreciate that for some of us the meals suggested for lunch might be eaten for dinner.
I have received requests from many of you about something nutritious and quick to go into the kiddies lunch box. I will do this soon. I have in my blog recipe for most of the dishes suggested in this meal plan. The plan is only a guide, you may wish to tweak the plan to your need. In the meantime here 7 ideas to help you implement this meal plan.
1, Weekend is a time to cook your soups if your family is not insistent on freshly cooked food, particularly oga*wink *wink.
2, For the Mackerel stew you should cook the plane version in bulk and add vegetables like carrots, cabbage and green spinach to creat variety in meals that call for this sauce to help you bring variety
3, For your pan cakes, you can mix the batter a night before and keep in the fridge and just fry off in the morning
4,Make your Peanut butter in advance , you will find an interesting recipe on this blog
5, Even Egg can be boiled a day before
6, Moin Moin , can be time consuming for those that are not comfortable in the kitchen. Sometimes I get my sister to make extra and I get from her . You might find a friend who can make extra and give you some:)
7, A Pressure cooker are a great investment to shorten cooking time. I use it for beans pottage, cow leg, shaki and stock fish

I apologize for the late response, for the stuffings you can try goodies supermarket or Shoprite as they may have or you can make your own with some butter, onion, bread cubes(optional), sausages and you can stir fry it with some Suya pepper or whatever other spices you have. For mashed potatoes you can boil and mash with butter and cream and add a bit of garlic for flavor, for the gravy you can take some of the juices from the turkey/chicken and heat it up with some butter, stir in flour and season with salt and pepper and serve. For the curry sauce I already have a recipe on the blog for that. Search for my fish curry sauce recipe and it’s there

I noticed there r no plantain meals on the roaster and I’m wondering why. I sometimes give my kids pancake at night cause its easier to mix then. Now ur idea of mixing the night before is great and I’ll try it.
is it wrong to eat things like fried plantain or pancakes at night? I don’t eat but I give my kids.
Hi Difuupen. Thank you for liking my site. I know fried plantains and pancakes are convenient and there is nothing wrong in having them on the menu from time to time but its also good to have other options that incorporate more vegetables particularly for kids. As you know they don’t like veggies and we have to start early to get them to like veggies as this is good for their health….digestive system and building healthy boys tissues like the skin.

Hello Oluchi, yes fried plantain can be eaten but also remember we are talking about things that will not make you accumulate weight from such a meals. You should please manage the portions.
