Vacation on my mind.
I have started planning for my annual vacation. I am planning the sites to visit, the clothes to take along , stuff to bring back etc;.I also plan to do quite a bit of walking as I will be throwing caution to the wind with my food choices. With exercise, I have come to balance out my food intake and maintain a good dose of exercise. The truth is I quite enjoy walking instead of seating in a car and being driven .
Today’ s recipe is sure to feature during my vacation, I must say I actually have 2 recipes in one – Minced Chicken in Cabbage Wrap and Spaghetti in Coconut and Cashew sauce.
Recipe for Minced Chicken in Cabbage Wrap (Makes 8 wraps)
Ingredients
1 cup minced Chicken
Cabbage leaves for wrapping
1/4 Onion( finely chopped)
2 pieces Scotch Bonnet Pepper
1/2 Green Pepper (cubed)
3 table spoons fresh Bread Crumbs
4 tablespoons Water
Pinch of Rosemary
2 cloves of Garlic ( crunched and chopped)
3 tablespoons Olive oil
Chicken Seasoning to taste
Salt to taste
Method
1, Peel the Cabbage leaves off the head, wash and pour hot water over the leaves to soften and make them them pliable
2, Mix all ingredients very well and wrap in the cabbage leaves
3, Steam the wraps without allowing them to touch the water at all for 30 minutes
Recipe for Spaghetti in Coconut & Cashew Cream
Ingredients
Handful Spaghetti
1 cup Coconut milk
1 tablespoon ground Cashew nut.
1/4 medium size Onion
Chopped Pepper to taste
2 tablespoons warm Water
Seasoning to taste
Spring Onion for garnishing
Method
1, Grate and get out your coconut cream.
2, Blend about 12 cashew nuts into a paste (like peanut butter)
3, Boil your Spaghetti and set aside
4, Bring coconut milk to boil , add onion and chopped pepper to taste
5, Correct seasoning in coconut milk , boil for 5 minutes
6, Use 2 tablespoons of water to dissolve the cashew nut into a light paste
7, Add this paste into the coconut milk and stir in to dissolve. Cook the sauce for 2 minutes
8, Stir the spaghetti in the sauce , sprinkle chopped spring onion and serve with the Chicken Wrap

How do u steam without water
Hello Amy, Thank you for following my blog. When I say to not to allow the chicken touch water, it means you need good elevation so the wraps only cook with steam. When you add too much water as we sometimes do with Moin Moin the water boils up and covers ths food. In this case if you do that you will get rid of the taste of the chicken. Hope this helps.

Thank you for following my blog. You steam like Moin Moin but not to allow the wrap get in contact with the water. You know sometimes the steaming water boils up to the food. The idea is to use little water at a time so the chicken cooks with only steam else all the taste will be lost in the cooking water.

Hello Yesi. Minced chicken is available in Shoprite stores or Gooddies supermarket. However if you want to do this at home, you may buy chicken breast , place in a zip lock bag and pound to a mince.
Can I use minced beef in place of the chicken
