My inspiration for today’s dish Minced Meat Rice Wraps in stew is from one of my favourite food shows, Barefoot Contesa. Using minced meat and rice at home I created this amazing dish.
Have you gone on holidays, bought this dress, tried it on in the shop and it looks all nice. And then, you come home and the first time you try it on for work you then go hmm???. Yes this was my plight yesterday . I was not confident to wear this one with the slightly shorter than my usual length. It was so annoying because I had to go back and forth deciding on this dress. Well lessons learnt if the debate is too much on an item then let it go.
Minced Meat Rise wraps is a case of deconstructing our regular rice and stew making the familiar take a new look. I chose to bake the wraps to allow the meat cook slowly through, you may wish to simply place the wraps in stew and cook very slowly.
Recipe for Minced Meat Rice Wraps
Ingredients
2 cups Minced Beef
1 cup cooked Rice
4 cooking spoons Stew
1 cooking spoon Vegetable oil
2 cooking spoon water or beef stock
1/2 medium size Onion( chopped)
2 cloves Garlic ( crushed and chopped)
Scotch Bonnet pepper to taste ( chopped)
1 table spoon Parsley( chopped)
Seasoning to taste
Salt to taste
Cabbage leaves for wrapping
Method for makeing Minced Meat Rice Wraps
1, Pre heat oven to 400degrees . If you are cooking on the burner then skip this step.
2, Mix together minced meat, water or stock, oil, seasoning, onion, garlic, pepper, parsley and rice. Knead with your hands to have a well blended mix.
3, Boil water in a big pot . Place the whole cabbage bulb in hot water so that peeling off the leaves is easier. Peel as much as you need for wrapping and rinse in cold water .
Kitchen tip: I will recommend using up the left over cabbage quickly as the heat from the water may not allow the cabbage to keep well in the fridge
4, Wrap the minced meat in cabbage leaf and place in a baking tray or pot.
5 , Pour the stew over the cabbage and place in the oven or cook over the burner
6, After 20 minutes turn the wraps over so the other side facing up cooks well. Cook for another 20 minutes
7, Serve on its own or with fried plantain.

Hello Idara, you cook the cabbage in the stew on low heat. The water from the cabbage will be enough to cook the meat if you really reduce the heat. Thank you for following my blog.

Hello Tinuola, you can use thyme or rosemary. It’s all about adding a nice flavour to the meat.
