The bland taste of new yam has finally gone off. I can now settle to enjoy yam; boiled or fried. So the challenge is to find exciting sauces to accompany the yam. Whilst I will not settle in to eat yam every day, but I like it when the accompanying sauce like Nigerian Mixed Vegetable Stew is available whenever I am in the mood to eat it. I also like to have boiled yam with Ugba sauce or Garden egg stew. I wonder what you like to eat your yam with? Recipe for Nigerian Mixed Vegetable stew
Ingredients
1 cup shredded smoked Mackerel fish
About 4 handful chopped Ugu leaves
1/2 handful Partmenger or Curry leaves
4 large tomatoes chopped
Scotch Bonnet pepper chopped (quantity to taste)
1 large Onion
2 tablespoons ground crayfish
3 cooking spoons VegetableOil
Seasoning cubes to taste
Salt to taste.
How to make Nigerian Mixed Veggies Stew
- Heat the oil.
- First, fry the onion for about 2 minutes. Add the tomato and pepper and fry for about one minute.
- Next, add the crayfish, season the fish and cook for another 5 minutes, stirring intermittently.
- Add the Ugu and stir cook for about 4 minutes.
- Lastly, add the Partmenger and cook for about one minute. Taste the stew and correct seasoning.
- Serve with boiled yam.
