Nigerian Mixed Vegetable Stew (3)

The bland taste of new yam has finally gone off. I can now settle to enjoy yam; boiled or fried. So the challenge is to find exciting sauces to accompany the yam. Whilst I will not settle in to eat yam every day, but I like it when the accompanying sauce like Nigerian Mixed Vegetable  Stew is available whenever I am in the mood to eat it. I also like to have boiled yam with Ugba sauce or Garden egg stew. I wonder what you like to eat your yam with? Vegetables deliver loads of vitamin and mineral benefits for as long as we do not over cook. 2-5 minutes is ideal to help retain the nutrient benefits in the vegetables.
Boiled yam and  Mixed Vegetable stew is a marriage that nature intended. The crunchiness of fresh vegetables paired with well cooked yam makes the mouth long for the next fork full of this delightful pair. Okay so I have tempted you enough, now let’s get cooking.
