I am making Turkey Stew because turkey meat is a common sight in most markets or cold room stores in Nigerian . We do not have to wait to eat turkey on special occasions like christmas . This makes having something special at Christmas even more difficult.
Pasta has also become a favoured carbohydrate choice because of the short cooking time. Spaghetti is competing with rice and yam as part of the carbohydrate accompaniment to Nigerian stew. So basically if you have some stew in the fridge you can quickly make a meal.
Nigerian stew is a sauce which consists mainly of tomatoes, pepper, onion, and vegetable oil with a meat of choice usually beef, chicken ,fish , snail and other types of meat.
The key to a tasty stew is first to have a good base , the tomato/pepper blend. Boiling this blend till the raw sourness of the tomatoes goes off is key to success of your stew.
gone are the days when anyone failed at making a pot of stew. It is possible to save a lot of cooking time when you prepare the stew base in advance and vary your proteins options.
Nigerian Turkey stew with macaroni is one of such dishes that can be fixed in such a short time. Vegetables in this stew is my twist to the regular stew.
Recipe for Nigerian Turkey Stew
Ingredients
2 medium size Turkey wings ( cut in pieces)
4 cooking spoons Tomatoes/ pepper blend( boiled)
1 medium size Onion
2 cooking spoons Vegetable oil
2 Chicken seasoning cubes
1 tablespoon Curry powder
Handful Runner beans
Handful Carrot
1 medium size Green pepper
Salt to taste
Method
1,Season the pieces of Turkey with onion, pepper, 1/2 teaspoon curry, one cube chicken seasoning,salt. Allow to stand for 30 minutes
2, Steam the Turkey for about 15minutes, allow to cool. Seperate the flesh from the bones. Trim off some of the skin and cut into cubes
3,Chop the onion
4,Heat up the oil and add the Onion and fry for 2 minutes
5,Add the Tomato/ Pepper blend and seasoning and fry about 6 minutes till dry , stirring at intervals
6,Add the Turkey and stock ,stir and cook for 10 minutes.
7,Add the curry powder . Cook for 3 minutes Add the chopped vegetables and cook for another 2 – 3 minutes
8, Serve with Macaroni .
