Peppered  Oxtail with honey is one of my treat dishes. If you shop in Nigerian open market, the best time to find oxtail (or cow tail as we call it Nigeria) is in the mornings. Well as cows have only one tail you can imagine that there will be few tails. The big grocery shops or super markets do stock frozen oxtail . Oxtail is generally the tougher part of the meat, so a pressure cooker will make your life easy. You will get a fall-off-the-bone texture with pressure cooker.

My preference for oxtail is also because of the strong beefy flavor it has. Whenever I cook oxtail I can be sure that there will be a lot more visits to the kitchen by the family to check is food is ready. The beef aroma just pulls you to the kitchen.

The speed with which plates of my Peppered Oxtail with honey were wiped out says a lot about the dish. I served my oxtail dish with Savory Rice but you can pair it with Jollof rice or any other rice of choice.

Pick up some oxtail and get cooking.

Recipe for Peppered Oxtail with Honey

6-8 Pieces cut up oxtail

2 small cloves Garlic

1/4 teaspoon Ginger

Dry Chilli Pepper( coarsely ground)

1-2 cooking spoons Honey

Beef seasoning to taste

Salt to taste

 

Method

1. Wash and season oxtail with garlic, ginger, beef seasoning , salt and some Chili pepper. Allow meat to marinade for about 30 minutes.

2. Cook meat in pressure cooker for about 45- 60 minutes. If you are cooking on the burner, then cook till the meat is soft to bite.

3. Heat up very little oil and brown the meat.

4. When meat is brown you can add the beef stock to the meat and cook till the stock dries up.

5. Add the coarsely ground pepper and honey and cook , stirring well to allow honey and pepper coat meat well.

6. Serve with Savory Rice.
