Pineapple Fried Rice

The rains in Lagos in the last couple of days  has so frustrated my posts on the blog you can’t imagine. It’s so funny how much I have longed for good sunshine. So this last weekend nature  smiled a bit on me and I was able to do a couple of things which will be coming your way soon.
The first is my own version of Pineapple Fried Rice. I know that a lot of people parboil the rice for fried rice but wait a minute is the name of the dish not fried rice? So logically the rice should be fried , so usually I fry the rice . This way the seasoning goes well into the rice rather than remain on the surface. Seeing that we cook Jollof Rice this way I am wondering why the fried rice story should be different . Well someone will say there are many ways to  catch a rat.
Yes but sometimes one way is more effective.

Recipe
2 cups Rice
4 pieces Beef sausages (cut in rings)
1/2 cup Pineapple chunks
1/2 cups Green Peas
1/2 cup Sweet Corn
1 medium size Green Pepper (diced)
1 large Tatashe (deseed end and diced)
I table spoon chopped fresh Ginger
2 cloves Garlic
3 pieces diced Scotch Bonnet Pepper (optional)
3/4 cup Olive oil or suitable vegetable oil
21/2 cups water or chicken stock
Chicken seasoning to taste
1/2 teaspoon white Pepper.
Salt to taste

Method
1, Wash the rice and drain out the water
2, Heat 1/2 cup of oil, fry 3/4 of the onion, teaspoon white pepper and 2 cubes chicken seasoning till translucent, pour in the rice and fry ,stirring frequently, to prevent rice burning. Fry for about 10 minutes until you start to hear a crackling noise.
3, Slowly add water or stock to the rice correct salt and seasoning and leave to cook on low heat until soft but not mushy
4, In a frying pan , heat up the remaining oil and fry all the other ingredients starting from the onion, garlic, ginger, Tatashe, sausage, green peas, and pineapple . Season the veggie and sausage mix with a little salt and seasoning if desired.
5, pour this mixture into the rice when cooked and stir to mix
6, Turn off the heat and add the green pepper and stir to mix. Voila, your Pineapple Fried Rice is ready!
