Diabetes is a condition that is ravaging many Nigerians at the moment. Basically diabetes occurs when the body is not releasing enough insulin to break down the carbohydrate eaten. That is why I am offering today Plantain and Fish Peppersoup as my contribution to the 2016 World Diabetes Day. Some of us have relations with diabetes and sometimes it is challenging finding interesting meals. Together with other Nigeria food bloggers living in Canada, Dubai and Nigeria we are collaborating to bring some attention to this condition.
Dishes like Plantain and Fish Pepper soup will bring satiety and allow you enjoy a meal without feeling left out from family meals. I am passionate about the issue of diabetes as friends and relatives have died from this condition. We can make healthy lifestyle choices an reduce our chances of having diabetes. Portion control and type of the carbohydrate we eat matters. It should be more whole grains , lots of vegetables, selected fruits that should dominate the meals

Recipe for Plantain and Fish Peppersoup
1 segment Fresh Fish
1/2 unripe Plantain
Dry chilli Pepper to taste
I seed Ehuru ( crushed)
3 leaves Effirin( shredded)
1/2 teaspoon Utazi( optional)
1 teaspoon Crayfish ( powder)
1/2 teaspoon Ginger powder
Salt to taste
Beef seasoning to taste
Method for making Plantain and Fish Peppersoup
1, Mix chilli pepper, ginger , Ehuru, beef seasoning and salt . Season the fish with this mix and set aside for about 20mins
2, Peel plantain and cut into small chunks
3, Add plantain into fish pot add some water, crayfish and bring to boil on low heat.
4, As soon as the fish is cooked, take out and allow the plantain to cook till very soft
5, Return fish to pot, add the effirin and uziza and cook for about 1 minute
6, Serve hot
