Prawn & Black Eye Beans Coconut Curry

Killing time in traffic

In the past couple of weeks getting to work in the mornings has been somewhat difficult with some major road construction in my part of town. I’m something of a veteran now at killing time in traffic.  My sleeping pattern has also been so disrupted as I have to scramble out of bed each morning to be sure I beat the traffic, some days I have been lucky but for most of the past three weeks its been hellish hell!

You will be surprised though at the many things you can do in traffic, particularly if you are not the one driving, I write my blog posts, update my to do list , clear my emails, I have read two books “Financial Intelligence” by Karen Berman and Joe Knight and Chimamanda’s book ‘Americanah’ ,I have even planned my vacation itinerary.  It’s so amazing how much I can get done sitting in traffic. Does this make sitting in traffic fun? Hell noooo! I really look forward to the time the construction will be completed, I quite like the smooth fast ride to work Smirking face. Well like they say no pain no gain. If this is the pain I need to take to have better roads, I will make the best of a bad situation. On the menu today is Prawn and Black Eyed Beans in Coconut Curry. EnjoyFried shrimpFork and knife.

Recipe

Ingredients

 8 – 12 pieces Prawns

Handful boiled brown Beans

2 cups Coconut Milk

1 tablespoon Curry Powder

2 fingers Fresh Ginger ( size of your little finger)

2 cloves Garlic

1 small Onion

1 teaspoon Cloves( ground)

2 pieces Fresh Tomatoes( cut into four segments)

1/2 teaspoon dry Pepper (coarsely ground)

2 cooking spoons vegetable oil

Seasoning to taste

Salt to taste

Method

1, Blend together using a little water, the garlic , half onion and one piece of the ginger and set aside.

2, Grind the clove and set aside

3, Dress the prawns and set aside

4, Heat the oil , chop and add the remaining half onion, 1 finger of ginger chopped and the cloves and fry till onion is translucent. Add the blended onion , garlic and ginger and fry for 3-5minutes

5, Add the curry powder and tomato wedges and fry for 2 minutes. You may wish to remove the tomato wedges and set advise to prevent them from crushing.

6, Add the coconut milk , dry pepper and shrimps and continue cooking the sauce till thick. Taste and correct seasoning

7, Lastly add the boiled beans and hand full of tender leaves of spinach . 8, Serve with steamed Basmati rice
