I remember the Nigerian Savory Pancakes we used to buy in primary school, had added pepper, onion and was fried in deep oil. Not the healthy type with very little oil. The soaking of the cake in oil was one of the attractions. 🙂
The onion aroma was another attraction for us, remember this was a public school. I guess the onion seems to remind us of some stewed stuff,’ fry yain’ which was the expression for Oyinbo (english)food.
The neighbors, the who wanted to show off their “foreign cuisine” prowess made sure you heard the sound of onion frying in their kitchen followed by the waft of onion aroma in the air. Today people use onion in many dishes , I wider if neighbors are oppressing each other with their cooking?
Pan cake is interesting because of it versatility in terms of combining with other ingredients . Coming out of Christmas, I still have some pieces of left over roast turkey and the regular vegetables are also still in the fridge. That is how come this dish . I trust you can find some chicken or even fish and do something with it. To relieve my primary school days I simply fried one piece with just pepper and onion and added sugar to the batter…. I dreamt of days when I did not have any cares in the world 🙂
How to make savory pancakes.
Recipe
Ingredient for batter
10 tablespoons Baking flour
4 eggs
110ml whole milk
Ingredient for filling
1 cup Shredded pieces of Turkey or chicken
1/2 cup Red Bell Pepper slices
1/2 cup Green Pepper slices
1/4 cup sweet corn (optional)
Mixed herbs or thyme to taste
Dry chili powder to taste
Chicken seasoning to taste
Salt to taste
Oil for frying
Method
1, Mix the flour, eggs and milk into a batter. Make sure all the flour lumps dissolve. I used a batter jug so I added every thing and shook the jug to mix the ingredients
2 , Add all ingredients for filling into batter and mix well. Alternatively mix filling ingredients into small portion of batter at a time
3, Heat the oil, enough to coat the base of the frying pan and fry your pancake a little at a time. Turn over the batter after about 2 minutes to fry the upper side. Use your spoon to press down the center of the cake , so it cooked through.
4 , Serve the Pancakes hot or warm with side salad for lunch or hot beverage for breakfast

I tried this out last night. I had leftover roast turkey and vegetables from Christmas too, including quite a large quantity of carrots, which I added to the filling. I used a peeler to make the carrot strips very thin. I stir-fried the filling for a few minutes and added it to the batter after pouring it into the fry pan. It came out great and tasty. Thanks for the inspiration.

Hello Chizoma. Yes you can use a mixer to mix the ingredients . For the milk it is full cream milk. What I meant is that skimmed milk may not give the batter a nice taste.
Can I try this without the milk?I don’t take milk and I would love to try out this method.
Hello Olanike. You need some form of milk, like soya or almond milk. These are none dairy . If this is not okay you can use water but it will not be as tasty.
