I am starting the year on a creative note with Semolina Mosa . It is because,January is my birthday month. This discovery has to be on the small chops menu for future entertainments in my house.
I am sure you know that feeling of being appreciated and celebrated . That was how I felt through out last week. My female colleagues at work decided it was going to be a week long celebration starting from Tuesday and counting down to Friday 23rd which was the D-day. Now, who has this type of celebration when you are not a government official? But yes I did have it thanks to some 2 great ladies who organized the coup. Doja and Imabong I do appreciate you both. My Facebook fans and blog followers were not left out . A very big thank you to all you wonderful guys, truckloads of hugs and kisses.
As you can imagine there were lots to eat and drink. I was having Semolina Mosa for the first time and found it quite interesting and thought that it could be an idea for your small chops going forward. I have tweaked things a bit to make it even more interesting and added some minced meat
Let me share with you one of the items that was on the small chops menu – Semolina Mosa. I am giving 2 recipes here. the plain version and the meaty version.

Recipe for Semolina Mosa
Ingredients
1 cup Semovita
1/4 cup Flour (baking flour)
2 tablespoons Sugar
1 tablespoon Yeast
1 cup warm Water
1/2 teaspoon Salt
Oil for deep frying
Method
1. Weigh out all dry ingredients except the yeast into a bowl
2. Dissolve the yeast in the tepid warm water, stirring well to dissolve.
3. Add the the yeast mixture into the dry ingredients and mix well.
4. Cover the bowl with a kitchen towel or cliing film and keep in a warm place to rise and double in size for about 35-45 minutes.
5. Start heating the oil 3 minutes before the dough is ready to be fried.
6. When dough has risen and doubled in size, mix again with hands. The risen dough will reduce in volume again, that is okay .
7. Drop small Semolina Mosa balls in oil and fry till golden brown or add the minced meat filling and mix. Scoop small balls at a time and fry till golden brown.
8. Serve hot with pepper sauce. If you are making the plain Semolina Mosa, you can serve with honey drizzled on it.
Ingredients for Minced Meat filling for Semolina Mosa
1/2 cup Minced Meat
1 tablespoon chopped Onion
2 cloves Garlic
2 tablespoons Vegetable Oil
1/2 teaspoon Ginger Powder
Half teaspoon Chilli pepper
1/2 cup shredded Carrot
1 teaspoon shredded Parsley
Beef seasoning to taste
Salt to taste
Method
1. Mix the mince, ginger, chilli, parsley beef seasoning and salt to taste. Knead the minced meat mixture properly.
2. Heat the oil, fry the onion and garlic till translucent.
3. Add the minced meat mixture and stir fry for about 5 minutes. Sprinkle on 1 table spoon water cover and cook till water dries up.
4. Add the carrots and stir fry for 1 minute. Rest the meat until ready for use in the batter.
