‘One Pot Cooking’ gets in all the flavours into all the ingredients and foods in the pot and results in tasty meals. When cooking the Slow Cook Chicken in Orange Sauce, I asked myself if it was not possible to boil the potato and fry the chicken and other ingredients and serve separately. Yes absolutely it is but I am not sure I will get the same result I did with the one pot version.
Right after the Slow Cook Chicken in Orange Sauce came off the fire my husband was hovering in the kitchen and I could tell it was not that he wanted to give me a helping hand. He believes the kitchen is my constituency and he says he does not like to interfere in my ‘ministry’. I hear this from many men. They don’t want to intrude or interfere simply means “I don’t want to help you but I want the output of that ‘ministry'”.
Anyway hubby wiped out the contents of the plate he was served. I quite appreciate this gesture because that tells me that you reading this post will like it also.

Ingredients
Whole Chicken cut into 4 parts (the soft type for frying)
3 pieces Potato chunks
1-2 pieces whole Tomato, cut in chunks
2-3 pieces dry Tatashe, deseeded
2 pieces Cameroon Pepper
3 pieces Scotch Bonnet Pepper (adjust to taste)
2 cloves Garlic
1 teaspoon white Pepper
11/2 whole Onion, chopped
Few leaves of Rosemary
3 sticks Carrot cut into chunks
1/2 cup Green Peas
1/4 cup Vegetable Oil
1 cup Orange juice
Seasoning cube to taste
Salt to taste
Method
- Seasoning chicken with chicken seasoning, salt, white pepper and roughly ground Cameroon pepper, 1/2 onion and garlic . Leave to marinade for about 30 minutes – 1hr
- Heat a little oil and brown the chicken
- Fry the onion until slightly brown in the oil used in frying the chicken
- Place the chicken, fried onion, potato, tomato, deseeded tatashe and rosemary in a pot. Add the remnant of the oil used in frying the onion.
- Add about 1cup water and 1 cup orange juice and bring to boil on medium heat for about 30-45 minutes ‘til chicken is soft and chicken is pulling off the bones. Stir in between the cooking to allow the sauce thicken. The potato helps to thicken the sauce
- Taste for seasoning and add the carrot and green peas for about 5-7 minutes.
- Serve hot.

Thank you for the recipe. You did not mention hw many oranges that will be needed for the sauce. Also, hw do I get fresh rosemary? Can I use dried ones? Is this dish d same as chicken casserole?
Hello Nonso. The quantity of Orange juice is stated in the recipe 1 cup.
You can use dry rosemary. This dish is not same as Chicken casserole but looks like it.

Hello Amanda. You can get rosemary from sections of the shop where spices like thyme are sold. You can actually replace the rosemary with thyme but use much smaller quantity of thyme. Thanks for wanting to try this recipe.
