Smoked Mackerel Sauce is sure going to get you enjoying your boiled yam, bread and plantain like never before. I love Mackerel fish because of the Omega 3 health benefits. I love it salads like Mackerel salad. What puts me off like for many people is the strong fishy smell. So using smoked mackerel fish for your sauce is the solution. I know that for many Nigerian families Egg stew or fish sauce is a favorite breakfast or brunch item on weekends. Seeing that yam is now tastier I am searching for sauces that will complement well. Since discovering Smoked Mackerel Sauce it has featured quite a bit on my menu.
The other special twist I have brought to this sauce is the use of coarsely ground tomato, pepper and onion. The texture of the sauce makes it quite suitable for pairing with boiled yam, boiled or fried plantain and bread. I have simply taken off the tasks of dressing fish, steaming or frying. So at the end of the day I save time, remove the strong fishy flavour from the dish and the house. You know how it is not easy to hide from your neighbours when cooking Mackerel fish. But with my Smoked Mackerel sauce they will not know when you cook.
You will love the mild smoky flavour of the fish and the tasty sauce. I will be glad to hear from you on your experience
Recipe for Smoked Mackerel Sauce?
Ingredients
2-3 whole lightly Smoked Mackerel Fish
8-10 pieces fresh Pepper or Scotch Bonnet Pepper( quantity to taste)
3-4 pieces whole fresh Tomatoes
11/2 medium size Onion
3 cooking spoons Vegetable oil ( add a little more if the sauce is for boiled yam)
2-3 cooking spoons blended Tomato/Pepper/Onion
Seasoning cube to taste
1/2 cooking spoon Curry leaves or Partmenjar
Method
1, Blend the tomato, pepper and 1 onion coarsely and set aside
2, Peel the skin from the fish ,remove the bones and break into large chunks. I prefer my fish chunky. If you want yours broken up dont worry whilst cooking it will all crumble up
3, Chop the half onion and set aside
4, Heat the oil, fry the onion for 1 minute, add the coarsely ground vegetables and fry for 5 minutes. Add the blended previously boiled tomato/pepper/onion and fry for 5 minutes
5, Taste and add seasoning and salt if need be. Your sauce is almost ready when oil starts to float on top of the stew and the tangy tomato taste is off
6, Add the fish and stir carefully or simply shake the pot and lower the heat for the fish to cook for about 3 minutes
7, Finally add the curry leaves , cook for 2 minutes and the Smoked Mackerel Sauce is ready.
8, Serve with boiled yam, plantain or bread.
