Coconut rice is one of my favorite dishes.Paired with coleslaw and dodo,I will just watch helplessly as my diet plan falls through…helpless indeed 🙂
There is something about the aroma of coconut milk with onion that just gets me. So yesterday for lunch I decided to try something with spaghetti and coconut milk, hoping it gives me the same feeling as the rice. Well it did not at the end. It was a different dish that I also liked , with no plans to replace with the rice. I like to use natural foods as much as possible which is why I make my coconut milk from scratch. I find the texture You may decide to use the canned version.
Some fun twist I brought to the dish is the threading of spaghetti in the sausage so the spaghetti is not all over the plate. I found it also makes for nice presentation. Isn’t it said that the eyes eat before the mouth?
It was interesting eating up the pasta strands and being ‘rewarded’ with the sausage just before the strands finishes 🙂

Recipe (Serves 4)
Handful Spaghetti
3 pieces Beef Sausages
1 cup Coconut milk
2 table spoons Coconut oil
1/2 cooking spoon blended tomato/ pepper
1 medium size Onion ( chopped)
8 pieces Shrimps ( optional)
1/4 cup Green Peas
1/4 cup diced Carrots
Chicken Seasoning to taste
Salt to taste
Method
1, Get the sausages very mildly frozen to allow for easy handling , and cut into. Small cylinders. If it is thawed , used a sharp knife to cut into cylinders. You may need to flour your fingers to prevent the meat sticking to the fingers
2, Pierce the spaghetti strands through the sausage. Fill in the pasta as much as possible into the sausage cylinder.
3, Bring water to the boil, add a pinch of salt ,I tablespoon coconut oil and mixed spices. Add the spaghetti and cook till soft. You may have to add more water to get the pasta to be well cooked
4, Remove the spaghetti and set aside. Boil down the water used in cooking the spaghetti and add to the coconut milk.
5, Bring the coconut milk to boil. Add the tomato blend, onion, shrimps, coconut oil, seasoning, salt to taste. Cook till sauce thickens. Taste and correct seasoning
6, Add the peas and carrot and cook for about 3 minutes.
7, Serve the spaghetti with the coconut sauce. Sprinkle on some coriander
