My lazy Weekend Brunch – Spicy Potato Frittata
Weekend is that time when most of us have more time to cook something special or slightly sophisticated . This last weekend I had decided to stay in bed a bit longer having had a pretty hectic week.I enjoy those weekends when I am not pressured to attend some social functions . Lagos life really does take its toll on all of us with work during the week and having to honour friends and relatives or even coworkers with your presence at their parties.
You know the feeling of lazying around the house in your pyjamas till 12 noon and having your breakfast in them, this is just relaxation for me and this how my last Saturday went .
The previous night I had prepped breakfast ,Potato Frittata inspiration. As always with most of the recipes on this blog, you will find the ingredients around your neighborhood .
New potato is out in the markets and I find myself eating it with the skin, baked or boiled Irish potatoes are great.
Potato Frittata is one of those meals that you can prepare over night keep in the fridge and complete in the morning when you are ready for breakfast or brunch.
Recipe for making Potato Frittata
Ingredient
5-6 pieces Irish Potato
Slices Green Bell Pepper
Slices Red Bell Pepper
1 medium size Onion( sliced)
3 pieces Tomato( slices)
2 pieces Scotch Bonnet Pepper
1 cup flaked Mackerel Fish
4 Eggs
Seasoning to taste
Spices of choice
Salt to taste
Method
1, Boil the potatoes for 5 minutes, peel and slice into rings.The potatoes should be cooked ,half done
2, Oil the frying pan, preferably non stick. Use a frying pan size that will hold the whole food tightly
3, Start to layer the vegetables in the pan by placing the potatoes at the base, followed by the peppers, fish,onion,tomato and lastly potato again.
If you would like to store your frittata overnight, Place the pan in a ziplock bag and place in your fridge.
4, Beat the eggs, add the seasonings , salt and spices like thyme or rosemary or even curry if you wish. I added dry pepper as well
5, Pour eggs over the veggies in the frying pan. Make sure the eggs fill up to the top potato layer
6, Place frying pan on burner to cook/ fry. Use a skewer to pierce through the dish to get the egg cook from base to top. Reduce the heat and cover pot for about 5-7 minutes for egg to set at base. Take off pot cover and increase heat for 2 minutes to brown the potatoes at the base.
7, Take frying pan off the fire , place a bigger frying pan over the small one containing the frittata and turn the product onto the bigger frying pan , and place back on the burner to cook the top part of the frittata.
8 Cook for another 5 minutes to help the egg on top of the frittata set
Cooking tip:You may wish to bake your product in the oven.

Looks quite appetising but exactly what quantity of oil is needed and beside when turning to the next frying pan will there not be a spillover that will cause the dish to loose shape
Hi,Helen. You only need to fub oil at the base of the pan to prevent the potato and egg from sticking, so it very little oil to line the base of the pan. When turning over the frittata, you place the big frying pan over the small one tightly and simple turn over the small over the big one. You should not have spills if carefully done.

Thank you so much for this recipe ma! I happen to have mackerel in my freezer that I have been racking my brain on what to use it for. I wonder how long it can keep in the fridge if I make a large quantity and use for breakfast over the course of the week, at least through to Wednesday.

Hi Chizoma. You can use lightly smoked fish. The very dry version will be a bit hard unless of course you cook it before use.
