Spicy Smoked Mackerel Salad

I am making Mackerel Salad because I like that smokey flavour of the fish . When you visit any Nigerian open market the ingredients that dominate the landscape are fresh pepper, tomatoes, onion and smoked fish. As many people cannot afford freshly caught fish, they depend on frozen smoked fish and mackerel is one the more common fish eaten. Stews and soups is what you will find this fish being used for . But today I am bringing to you something interesting to do with the smoked mackerel fish, it’s Mackerel Salad. Salads are largely eaten at parties or restaurants in Nigeria. How about that we can bring salads into our day to day meals. Using smoked mackerel fish maybe the way to get salads to appear more frequently in Nigerian meals.

The nice sweet crunch of the red apple complements the fish quite well. I also added a little fresh scotch bonnet pepper pieces and it was just amazing. I actually felt like I was eating a meal that has originated from Nigeria.

If you think that salads are just side dishes you will think again as this salad can make a nice light meal particularly when you pair this with a little bread.

The beauty about this dish is the little time it takes to prepare. You only need to boil the eggs, the rest is just to chop up things that’s all.

Recipe  for Mackerel Salad

Ingredients

1 smoked Mackerel fish

1 red Apple

2 Boiled Eggs

1 head Lettuce

2 pieces Scotch Bonnet Pepper

2 tablespoons Mayonnaise

1/4 lime

4 fingers Spring Onion

Mackerel Salad

Method

  1. Boil the eggs and peel
  2. Flake the fish keeping removing all the bones and peeling off the skin
  3. Wash and chop the lettuce into big chunks
  4. Chop the spring onion and pepper and mix with the mayonnaise and set aside
  5. Lastly, cut up the apples and squeeze the lime juice on the apple to prevent it from darkening
  6. Mix all the ingredients and pour on the mayonnaise
  7. Enjoy your salad with bread.
