Stir-fried Abacha and Stew

30 hours a day is not enough!
It’s about a few days before I jet off on vacation, and its like I need 30 hrs a day to get things done, packing, tidying the house, cooking and photographing  for the blog, not to talk of the office work, soooo much to do this last week. So I just got into my written plan mode, I find that this is  a very sane way of getting through pressure. When tasks are written and you put timing to them then, they don’t look that overwhelming to work on and finish.
One week before now my suitcase for traveling  had been packed. I am not one for last minute shoving of clothes into the box as  I like to pack only essentials. My kids can’t seem to understand this level of advance planning , but I do. 🙂
In all of the frenzy  of getting ready for holiday,this last weekend was not at all light with many social events to attend to including a dinner date with hubby . This last one I could not complain about , I have been feeling like eating out. 😛 . As we were stepping out the door, my son said he wanted to take a picture of the ‘old love birds’. Today , I am offering something I discovered my self by some trial in the kitchen, its Abacha( dried cassava chips) served with beef stew. You can easily buy Abacaha from the Igbo women selling condiments in the market. This dish is an interesting variety to Rice and Stew .
Recipe
Abacha (enough to serve 4)
2 cooking spoons Vegetable oil  or 2 table spoons butter1 cooking spoon chopped onionChicken seasoning to tasteLittle salt to tasteMethod

1, Pick out dirt and rinse the Abacha in cold water to get rid of dust and  dirt.

2, Strain out water in a colander or basket sieve, as you will do for washed rice

3, Heat the butter, fry the onion until soft and the aroma feels the air, add the seasoning to taste and little
salt

4,Add the washed and strained Abacha and stir fry for about 2 minutes

5, Serve with beef or chicken stew. And some veggies.
