I was over at my sister’s place about three weekends ago and I was reminded by my brother in-law, Sami of a vegetable side dish I had made for them on one of our holidays in Canada. He could never could forget how tasty the Stir Fried Vegetable was . To be honest this was one of those things I jammed in the pot because those were all the ingredients I could find in the fridge at the time. Just out of luck this simple combination seems to have turned out well.
I used the frozen English spinach to make my version but I have also tried it with the local Nigerian spinach called Tete in Yoruba, Aleho in Hausa or Green as the rest of us call it. If you are using the green or fresh English spinach, I will recommend to blanch the vegetable before use so you reduce the water in the final dish. Blanching simply means dipping the vegetable in hot water to wilt and immediately shock and rinse it in cold water. This process helps to reduce the water but keeps the green colour of the vegetable
I have since incorporated this vegetable dish into my menu as a side dish or sometimes even eat as is when I am having a late dinner and do not want to feel uncomfortably full at 8 pm.

Recipe for Stir Fried Vegetable
Ingredients
2 cups blanched Spinach
1/4 medium size Onion (chopped)
1 Scotch Bonnet Pepper (chopped)
1/4 teaspoon Curry powder
2 strips Bacon (optional)
2 fingers Beef Sausage
8 pieces fresh Shrimps
1-2 cooking spoons Olive oil or vegetable oil
Seasoning cube to taste
Salt to taste
Method
- Pick and blanch the vegetable if you are using the fresh Aleho. Chop and set aside
- Chop, onion, pepper, sausages, bacon. Dress the shrimps
- Heat the oil, and fry that bacon first for about 2 minutes, then add the onion and pepper and fry for about 2 minutes. Add the sausage and shrimps and fry for another 2 minutes.
- Add the curry, seasoning and correct the salt. If you are using bacon you may not need to add more salt.
- Lastly, add the vegetable and stir fry for about 1 minute. Cover and cook for another 2 minutes and your stir fried veggie is ready.
