Generally sweet potatoes are excellent source of fibre, vitamin B6 which aids healthy blood vessels, its good content of vitamins C&E and beta carotene makes it a beauty food of some sort. I have this habit of accompanying my carbohydrate foods with stir fried vegetables. This time I am using Aleho ( Hausa) or Efo Tete as the Yorubas call them.
Paired with fish stew I had in the freezer, my protein source was already there, what more can you ask for on a plate to call it a nourishing meal. Simple but tasty.
Recipe for Stir Fried Vegetables
1, Wash and chop a medium bunch of the Aleho into tiny bits.
2,Chop 1/2 onion.
3,Heat 1 cooking spoon vegetable oil.
4 Fry the onion , add seasoning to taste, add pieces smoked prawns and a pinch of curry for about 3 minutes
5, Add the vegetables and stir fry for 2 minutes.
Serve as side dish

Hello Ezine. I always say seasoning to taste because it depends on the brand you are using. For me 1/2 a teaspoon is fine or 1 cube to about 3 handfuls of the chopped veggies. Remember that there are pieces of dried prawns.
