This last week I was in the open market over the weekend after a long time of not going to the market. Most of my major food items had run out so it was time to stock up. It’s really shocking to see the way prices of food items like garri , rice and beans have just sky rocketed . I was bargaining so hard for every thing that by the time I left the market I was completely exhausted. Are things cheaper in markets outside of Lagos? I just wonder .
Today I bring you yam pottage with Ugba and garden egg . Yam is getting sweeter and drier and this is time to enjoy the last batch of old before new yam comes with its bland taste. I kind of like the blend of the sweet yam with the slight bitterness of the garden egg. Enjoy.
Recipe ( serves 4)
16 Yam cubes
4 pieces Tomato(chopped)
1 medium size Onion ( chopped)
Pepper to taste
Handful Ugba
4 medium size white Garden Eggs( chopped)
Handful dry shrimps( dressed)
Pieces of smoked Fish
1 table spoon ground Crayfish
2-3 cooking spoons Palm oil
Seasoning cube to taste
Salt to taste
Method
1, Peel and wash the yam and cut into cubes
2,Place yam in a pot ,add onion, pepper, tomato, seasoning , some water to cover the yam and bring to boil . Water should just cover yam but not too much
3, Cook yam for about about 10 minutes, add the shrimp , smoked fish and crayfish and continue cooking till yam is almost soft. Check the water in the sauce and add a little more if need be such that you have enough sauce to serve with the yam at the end.
4, Using wooden spoon stir the pottage to thicken the sauce and add the palm oil. Taste for salt and cook for 2 minutes
5, Add the garden egg and Ugba and cook for another 3-5 minutes
6, Serve warm.
Can I still add Ugwu or scent leaves at the end? Is ugba relative to the common Iru? Do you wash your ugba with cold or warm water?
