Baked vegetable omelette and dodo is the perfect breakie pair. Who does not like dodo ( fried ripe plantain)? Soft or hard Nigerians just love their dodo. Omelette on the other hand just seems to have positioned itself as the perfect partner .It is therefore common to find dodo and omelette on hotel menus. In some homes weekend breakfast is incomplete without dodo and eggs.
Loading the eggs with vegetables and baking instead of frying is my twist to the regular Nigerian eggstew .
If you are on a weight reduction diet having just the baked omelette is a great breakfast. Eggs help to keep hunger at bay till lunch. I have tried 2 of these omelette pieces and it works so well . the vegetables you add to the omelette can be varied. I usually will check the fridge to use up left over vegetables. Since many of us like to have some sauce with dodo then a spoon of stew can be used.

Baking a dish like this will generally reduce the use of oil. so instead of egg stew why not try this Baked vegetable omelette.
Recipe for baked vegetable omelette (serves 4 )
4 eggs
Handful chopped Spinach
1 Carrot (shredded)
2 chopped fresh Pepper( scotch bonnet)
1 whole Tomato(chopped)
1/4 medium Onion(chopped
1/2 tablet Chicken seasoning
2 tbsps Olive oil
Salt to taste
Method
1,Pre heat oven
2,Whisk eggs with the seasoning and a little salt
3,Combine all the vegetables , pour in egg mixture , oil and mix
4, Scoop mixture into cup cake pans
5, Pop into oven and bake for 15 minutes
6, Serve with fried plantain with some pepper sauce

Hi, Dobby. It is sure nice with some cruncy veggies in between the egg. I recommend some sprinkle of pepper sauce ot a little stew.
Am definitely going to try this out. Have been thinking of protein breakfasts that will aid my diet plans.
Hi Chinny. Yes the egg dish will help your diet plan but be sure to limit to say 2ce a week. Take it easy on the dodo, this carries plenty Calories. You may opt to boil the semi ripe version.
What temperature did you bake the eggs at? Mine came out a a bit too brown 🙁
Hi,Ore.I set the temperature on medium heat and pre heated the oven before putting the eggs. You then continually check on the egg by putting a knife in the middle of the egg to see if it come out clean that means it is cooked.However if the egg is almost cooked you can turn off the heat and leave the egg in the oven, the balance heat will cook the egg. Please oil your baking cups well. Thank you.
Hello, i just came across this blog and am loving it already. Quick one please, am confused as to which vegetable is called Spinach because our local markets don’t know what spinach is neither do i. Is it the regular vegetable called Green in our local markets?
