My idea of healthy snack
For want of a name to describe this exciting oven baked product I came up with during the week, I have decided to call them flatties … Banana Oat Energy Flatties. As you will soon find out ,this is just what they are flats. The important thing is that your pallet will like it and eating it is guilt free because it’s all loaded with all food goodies.
Today’s recipe is one of those simple but nutritious snacks that you can prepare speedily. If you are looking for that snack that is high in Energy and Fibre, then this is it. You have the goodness of energy from the banana, oats and the dates.I experimented with Ibo banana (the sweet variety of Banana),oats, groundnut and dates and the result was some snack that colleagues at work kept asking for more. I doubt that the Yoruba banana will have the same effect as they are somewhat tangy, but no harm in you trying if this is all you’ve got.
For those that have kids in the house how about involving them in this simple cooking session. They will proudly want to take their healthy product to school to show off to friends.Lunch box idea *wink *wink
How to make Banana Oat Energy Flatties
Mash 3 bananas with a fork until it is smooth, add 1cup of oats , 1/2 cup of crushed groundnuts and 1/4 cup chopped dates.
Mix all ingredients well and scoop onto an oiled baking tray. Flatten or spread out each scoop so that the cookies can cook evenly well.
Bake in a preheated oven for 25 – 30 minutes.
Turn each cookie after about 15 minutes to brown each side properly .
Enjoy with your coffee or fresh fruit juice.

They can be found in local markets.
You can also find them in shops.
the 1 cup of oat is it the powdered one or already prepared with hot water?
