Meaty Yam Balls

I remember cold Yam balls from my childhood and I have stayed away from Yam Balls whether hot or cold. I never really liked it and I had wondered what the big deal was about these little balls, until I made my own version of Yam Balls and like they say, my life has not remained the same again.

In this recipe I am using minced meat so you have something to bite into as you enjoy each ball. I know for easy of availability some people might decide to use corned beef, that is okay but it does not give the same effect. The second key ingredient for me is butter, not margarine. Butter brings a very nice flavour to the yam such that every bite leaves an unforgettable taste

These Yam Balls can form part of your main meal when you add some stir fried vegetables and additional chili sauce if you are like me. The yam balls can also form part of your small chops offering because hot or cold these pretty balls retains its goodness. The crunchiness of these balls contracted with the creamy, chewy inside is a package of texture and flavor experience.

Recipe for Yam Balls

Ingredients

1 cup mashed Yam

1 tablespoon Butter

11/2 cups minced Meat

2 cloves Garlic

1 teaspoon Ginger powder

Dry Pepper to taste

1/2 teaspoon fresh or dry Rosemary

1 Egg

1/2 cup bread crumbs

Beef seasoning cube

Salt to taste

Oil for deep frying

Method

  1. In a bowl mix minced meat with some ginger powder, chopped onion, beef seasoning, crushed chopped garlic, dry pepper and rosemary. Sprinkle in a little water, Knead with your hands or mix with a spoon to ensure all ingredients are well mixed. Set aside to marinade for about 30 minutes.
  2. Heat about 2 cooking spoons of oil and fry the minced meat. Use the spoon to separate the mince whilst frying to achieve smaller lumps of mince instead of big lumps. After about 5 minutes of frying add 1/4 cup of water cover the meat, lower the heat and cook till water dries up. Set aside.
  3.  Peel and cut yam into small cubes, so this cooks faster. Mash with the butter and a pinch of salt, using potato masher of wooden spoon.
  4. Combine mashed yam and minced meat sauce, mix well and mold into balls.
  5. Beat the egg, add a little ginger powder and salt to the egg. Dip each yam ball in the egg and then roll in the bread crumbs and set aside.
  6. Heat the oil and deep fry the balls a few at a time until golden brown. Drain on kitchen paper. You may wish to bake the balls.
  7. Serve hot with some veggies and pepper sauce if desired.

Tip: To make bread crumbs, toast your bread and grate using a grater or blend in the dry ingredient part of the domestic blender.
