Rainy season in Nigeria is time to have fresh Beans Corn pottage (adalu). I believe those of us who love fresh foods sometimes have a problem keeping our weights under control during the rainy season. Mangoes, corn, ube (native pear), cashew fruit and much more are all in season at this time of the year.
On my way to Ibadan last week, I was able to buy some fresh corn on the way. One way to store corn when you buy in bulk and wish to store is to freeze quickly without peeling.This way it retains the same sweetness of the corn. However, the longer you keep corn after cutting they tend to loose the sweet taste and it just goes bland.
Today it’s a corn meal and beans on the menu. Nothing beats the sweetness of freshly cut corn. Combining corn with beans cooked in a pressure cooker is a meal that will make you fall in love with beans if this was not your favorite meal. The crunchy, chewiness of corn paired with the soft beans……I leave the rest to your imagination .

My twist to this recipe is the addition of Vegetables but Adalu is the Yoruba version.
Recipe for Beans Corn Pottage
Ingredients
1 cup fresh Corn ( boiled)
2 cups brown Beans(black eye peas)
2 cooking spoons tomato/ pepper mix
4 pieces whole Tomato(chopped)
1 medium size Onion
Handful Ugwu( chopped)
2 tbsps tomato purée
1 tablet crayfish seasoning
2 beef seasoning cubes
Salt to taste
2 Cooking spoons of Palm oil
2 bottles of 60 cl water
Method
1, Combine in a pressure cooker, the beans and all the ingredients except for the oil
2, Add the water and cook under medium heat for 30 minutes
3, Add the cooked corn and vegetable into the beans, stir and cook for 2minutes.
4,Add the oil and cook for 3 minutes
5,Serve with smoked shrimp pepper sauce.
